Ingredients for Aiyu Jelly For 4 people

Aiyu seeds 50 gr Filtered water 700 ml (2.5 cups of rice)

What are Aiyu seeds?

  • Aiyu seeds are a type of seed from a wild plant growing in the mountainous area of Trung Khanh district, Cao Bang province in our country.
  • When dried, Aiyu seeds have a light yellow color and a distinct, attractive aroma that is loved by many and used to make the famous Aiyu Jelly dish.
  • Currently, you can easily buy Aiyu seeds at Cao Bang specialty shops or on major and reputable e-commerce platforms.
  • The market price for Aiyu seeds ranges from 300,000 to 400,000 VND/kg (price updated in October 2021)

How to Prepare Aiyu Jelly

  • Sift the seeds

    Separate the seeds from the mác púp flower, then place all the seeds into a sifter, gently shake, and use a spoon to stir evenly so that the fine powder of the mác púp seeds falls into the bowl placed underneath.

  • Massage the seeds

    First, place the sifted seeds into a cloth bag and tie the bag securely.

    Next, add 700ml of warm filtered water (2.5 cups of rice) into a bowl and immerse the bag containing the mác púp seeds.

    Massage vigorously for about 5 – 8 minutes until the water in the bowl gradually turns yellow, then remove the bag.

    Use a sifter to remove any residue on the surface of the water to make the mixture visually appealing.

    Ingredients for Mango Aiyu Jelly Serves 4 people

    Mango 250 gr Aiyu jelly powder 25 gr Coconut milk 50 ml (sweetened fresh milk) Ice cubes a little Mint 1 sprig Filtered water 1 liter White tapioca pearls 100 gr

    Where to buy aiyu jelly powder?

    • You can buy aiyu jelly powder at stores that sell mixing ingredients or on reputable e-commerce sites, with prices ranging from 200,000 to 260,000 VND for 1kg of aiyu jelly powder (price updated in October 2021).
    • When purchasing, you should choose products with clear origins, clearly printed necessary information such as: manufacturer, production location, expiration date, production date, and those trusted by many people!
    • To ensure safety and avoid buying counterfeit products, you should choose to buy directly at large reputable mixing ingredient stores in your area.

    How to make Mango Aiyu Jelly

    • Prepare the mango

      Wash the mango thoroughly, drain it, slice it, and then use a knife to cut the flesh of the mango into small square pieces.

      Next, hold the cut mango piece, use your two middle fingers to push the center of the mango up so that the mango pieces protrude, then use a knife to cut the flesh of the mango into a bowl.

    • Blend the mango

      Put all 250g of the chopped mango into a blender, then start the machine and blend at medium speed for about 3 minutes until the mango is smooth.

    • Cook the Mango Aiyu Jelly

      Boil 1 liter of water, then add 25g of Aiyu jelly powder, stir well, and continue cooking for about 2 more minutes until the jelly powder is completely dissolved.

      With one hand stirring, slowly pour in the blended mango mixture with the other hand. Stir continuously until the Mango Aiyu jelly mixture is evenly colored, then turn off the heat and let it cool.

    • Strain the mixture and pour into molds

      After the mango aiyu jelly mixture has cooled, use a strainer to filter out the remaining mango pulp and pour the smooth jelly mixture into molds.

      Wait about 15 – 20 minutes for the jelly to set, then use a knife to cut it into small bite-sized squares.

    • Decoration

      For decoration, we just need to arrange small pieces of mango, cooked white tapioca pearls, and 50ml of coconut milk or sweetened fresh milk along with a sprig of fresh mint on top.

    • Final product

      The mango aiyu jelly, once completed, will have a smooth, elastic texture with a strong aroma and flavor of ripe mango.

      The tapioca pearls served with it are chewy and sweet, while the fresh milk or coconut milk adds a creamy, mild sweetness. Adding a few ice cubes to enjoy makes it incredibly delicious!
