Prepare the Ingredients
The vegetarian ribs you bought should be soaked in cold water for about 45 – 60 minutes to soften. After that, use your hands to squeeze out the water from the ribs, then rinse with cold water, and squeeze again once more.
When the ribs are dry, cut them into bite-sized pieces horizontally.
Peel and crush 2 cloves of garlic, then finely chop them. Wash the chili peppers and chop them finely as well. Keep the chopped chili and garlic separate, do not mix them together.
Tip: If you don’t like using vegetarian ribs, you can replace them with vegetarian sausage or tofu skin to prepare the dish according to your preference. -
Fry the Ribs
Place a pan on the stove and add 3 tablespoons of cooking oil to heat until boiling. Wait until the oil in the pan starts to shimmer, then add the cut vegetarian ribs to fry.
Keep the heat medium and flip continuously to prevent the ribs from burning. When all sides of the vegetarian ribs are golden brown, remove them to a plate.
Note: It is advisable to use a sieve or paper towel to absorb excess oil from the ribs. -
Make the sauce
First, you heat a pan and add 2 tablespoons of cooking oil. Next, you add minced garlic and chili and sauté them.
When the garlic and chili are fragrant, add 3 tablespoons of lemon juice, 3 tablespoons of granulated sugar, 2 tablespoons of chili sauce, and 1 teaspoon of salt, then stir well.
Keep the heat medium and continue stirring until the mixture boils and starts to thicken.
Tip: Adjust the seasoning to suit your taste. -
Stir-fry the ribs
When the mixture in the pan has thickened, add the fried ribs and stir-fry evenly for about 5 minutes. Then turn off the heat and arrange the stir-fried ribs on a plate.
Note: Stir evenly to ensure the sauce is absorbed on all sides of the ribs. -
Final product
The golden, crispy ribs are rich in the sweet and sour flavor of the sauce combined with the aroma of sautéed garlic and chili, looking very appealing and appetizing.

Prepare the Ingredients
Soak the vegetarian pork ribs in cold water for about 45 – 60 minutes until they soften. Then, use your hands to squeeze out the water from the ribs firmly, and then cut them into bite-sized pieces horizontally.
Peel the garlic, crush it, and then chop it finely.
Note: You should press down firmly on the ribs to extract the water instead of squeezing. Squeezing too hard can cause the ribs to become mushy, and they won’t fry nicely.
Braised ribs
Put the fried spare ribs into the sauce and braise evenly on low heat. When the ribs have absorbed all the seasoning, turn off the heat and serve on a plate.
Tip: If you prefer a sweeter taste, add more sugar!
Final product
The spare rib pieces have a beautiful golden brown color, shimmering. When eaten, you can feel the crispiness on the outside and tenderness on the inside. The dish is a combination of the rich sweet and sour taste of tamarind sauce intertwined with the fragrant smell of garlic.
Tip: The dish will taste better when eaten with white rice.
