  • You should choose fresh flowers that have an eye-catching green color, with light yellow petals; avoid flowers that are dark yellow which may be old or spoiled, and those that are bruised or wilted inside.
  • You can try breaking a flower stem with your hand; if it snaps crisply, it means the flower is still fresh and young, not wilted, and can be purchased.

How to prepare Beef with Butterfly Pea Flowers

  • Prepare the ingredients

    Butterfly pea flowers bought should be soaked in salt water for about 10 – 15 minutes, removing any wilted or spoiled flowers, then rinse thoroughly and let drain.

    Beef should be cleaned and cut into thin slices. Onion, peeled, cleaned, and sliced thinly.

    Garlic and shallots peeled, cleaned, and minced. Chili cleaned and sliced thinly.

    Marinate the beef with 1 teaspoon of sesame oil, 1 teaspoon of soy sauce, 1 teaspoon of oyster sauce, 1 teaspoon of mayonnaise, 1 teaspoon of minced garlic, and 1 teaspoon of minced shallots.
