How to choose fresh shrimp

  • Choose shrimp with a transparent outer shell and a slight smell of seawater, not foul or fishy.
  • Choose shrimp that have a slightly curved body, firm meat but not unusually plump, and the joints on the shrimp body should not be separated; the head and body of the shrimp should be tightly attached.
  • Avoid buying shrimp that have dark spots or uneven colors or are slimy.

How to prepare stir-fried long beans with fresh shrimp

  • Prepare the ingredients

    Remove both ends and the tough fibers of the long beans, then soak them in diluted salt water for about 5 minutes to make the beans chewy.

    Divide the beans in half; one half you will wrap like a flower crown, the other half you will cut into pieces about the length of a finger joint.

    To wrap the long beans: wrap them into 2 small circles, then use the remaining ends of the long beans to wrap around tightly so that they don’t fall out.

    Wash the shrimp, peel them, make a slit down the middle of the shrimp’s back, and remove the black vein. If you are using frozen shrimp, wait for them to thaw and then prepare them just like fresh shrimp.

    Tip: To quickly remove the black vein from the shrimp, you can use a toothpick or a sharp stick to poke into the second segment from the head of the shrimp’s body and gently pull the vein out.

    Wash and prepare the following ingredients: onion cut into wedges. Bell pepper sliced thinly. Tomato diced. Chives chopped, separating the white parts from the green leaves. Minced shallots.

  • Marinating shrimp

    Put the shrimp in a bowl and marinate the shrimp with 1 teaspoon of chopped chili, 1 teaspoon of fried garlic, 1 teaspoon of fish sauce, 1/2 teaspoon of pepper, and 1 teaspoon of cornstarch, mix well and let it sit for 15 minutes for the shrimp to absorb the seasoning.

    Tip: When adding cornstarch to the marinade, it helps the shrimp become sweeter and stick better to the green beans, preventing the dish from releasing too much water while stir-frying, making it tastier and more visually appealing.

    Heat a pan on the stove, add 2 tablespoons of cooking oil and heat it up. Add chopped garlic, green onion, and a little spring onion to sauté until fragrant.

    Add the shrimp and stir-fry for 3 – 5 minutes until the shrimp changes color. Add tomatoes and onions and stir-fry for another 5 minutes until the onions are transparent and the tomatoes are soft, then remove.

    Continue using the pan that was used to stir-fry the shrimp, add the chopped green beans and bell peppers to stir-fry first. Stir well for 2 – 3 minutes. Add 1/2 teaspoon of salt.

    Wrap the green beans in and stir-fry for 5 minutes until the beans are translucent and cooked, then add the shrimp, stirring well. Sprinkle 1/2 teaspoon of ground pepper on top and season to taste, then sprinkle with green onions and turn off the heat.
