Pineapple 1 fruit Low-sugar yogurt 100 gr (2 jars) Fresh milk 3 packs Condensed milk 600 gr

How to make Pineapple Yogurt

  • Mix the yogurt mixture

    You add 600g of condensed milk and 1.5 cans of boiling water into a bowl and stir well. When the milk is completely mixed with the boiling water, add 1 can of cool water and stir in one direction.

    Then, add 3 packets of fresh milk to the mixture and stir well.

    Wait for the milk mixture to cool down to about 15 – 20 degrees Celsius, then add 2 jars of yogurt starter, stirring in one direction to dissolve.

    Note:
    • If you add yogurt while the milk mixture is too hot, the yeast will die, and if added when too cold, the yogurt fermentation will not be good.
    • Take the yogurt starter out of the fridge at least 1 hour before, because if the yogurt starter is still cold, it will not ferment when added to the milk mixture.

  • Yogurt incubation

    You use food wrap to cover the surface of the bowl tightly or use a lid to seal the bowl.

    Then, place the stainless steel bowl into a tray containing boiling water at about 80 – 100 degrees Celsius and incubate for about 8 hours.

    If you have an oven at home, place the tray inside the oven, without turning on the oven, but cover it tightly to create a warm environment for the yogurt to ferment more easily.

  • Making pineapple juice

    You peel the pineapple and cut out the eyes. After that, slice the pineapple into thin slices and put them into a blender to puree.

    You pour all the pineapple juice you just blended into the yogurt bowl that has been incubated, stirring in one direction until it is combined into a homogeneous mixture.

  • Pouring into molds

    After thoroughly stirring, you scoop it into molds, yogurt container or put it into a small plastic bag and use a rubber band to tightly secure the bag’s opening.

    Next, you place the yogurt in the refrigerator in the cool compartment to consume over about 2 – 3 days. If you want to keep it longer, place the yogurt in the freezer of the refrigerator.

How to Make Layered Pineapple Yogurt

  • Mix the yogurt mixture

    Add 200ml of condensed milk into a glass jar or bowl, pour in 150ml of boiling water, and stir well. Next, add 250ml of fresh milk and 100ml of cool water, stirring in one direction.

    Then, add 1 container of yogurt starter, stirring in one direction.

    Note: You should not add yogurt when the milk mixture is still too hot as this will kill the yeast.

  • Pour into molds and incubate yogurt

    You pour the yogurt mixture into individual cups. Next, you add 3 liters of warm water at about 50 – 60 degrees Celsius into a pressure cooker or rice cooker, then place each cup of yogurt inside, close the lid, and incubate for about 8 hours.

    After 8 hours, you take the cups of yogurt out.

  • Making pineapple sauce

    Buy a pineapple, peel it, remove the eyes and the crown. Then, cut it into small pieces and put them in a blender.

    Next, add 100g of white sugar, 60ml of fresh milk, and 1 teaspoon of salt to the pineapple, blend until smooth, and pour it into a bowl.

    Place the bowl of pineapple on top of the part of the pot containing hot water in the pressure cooker, plug it in, and stir gently until the mixture thickens slightly.

    Tip: Pineapple sauce can be concentrated by cooking directly on the stove, but it should be cooked over low heat to prevent the sauce from becoming too dark.

How to Choose Fresh and Delicious Pineapple

  • To buy good pineapples, you should choose those that are slightly rounded, short, with large eyes if possible, and have an attractive yellow color, sometimes mixed with green as these are ripe fruit with a certain sweetness.
  • You should choose fruits that have a sweet fragrance, not too strong, when touched feel moderately soft, with slightly wrinkled skin as these are delicious ripe pineapples.
  • You should not buy green pineapples, those that are unevenly ripe, have a strong smell or no fragrance, when pressed the fruit sinks in or feels hard and heavy as these are not good pineapples.
