How to make Fried Chicken Feet with Tamarind Sauce

  • Prepare the chicken feet

    Wash the chicken feet thoroughly with salt, cut off the sharp nails, and then chop them into small pieces.

    Marinate the chicken feet with 1 teaspoon of lion powder, 50g of crispy flour, 1 egg, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, mix well and marinate for 30 minutes.

  • Fry the chicken feet

    Next, roll the chicken feet in the crispy flour. Place them in a hot oil pan and fry until golden brown, then remove and place on paper towels to absorb the oil.

    Put the pan on the stove with a little cooking oil, when the oil is hot add chopped onion and garlic to sauté until fragrant, then add the mixture of 150ml tamarind juice, 1 teaspoon salt, 1 tablespoon fish sauce, 4 teaspoons sugar, and 1/2 teaspoon pepper and stir well to make the sauce.

    When the mixture boils for a few minutes, turn off the heat and transfer it to a bowl to serve as dipping sauce.

How to Make Crispy Fried Chicken Feet with Salt and Chili

  • Prepare the Ingredients

    Smash the lemongrass, then cut into pieces, and shred the smashed lemongrass.

    Slice the ginger and finely chop the garlic and chili.

    Wash the chicken feet with salt, cut off the sharp nails, and then cut them into halves.

  • Boil the Chicken Feet

    Put the chicken feet into a pot along with the cut lemongrass, ginger, a few shallots, and 1 liter of water. Place the pot on the stove and boil until the water boils, then remove the chicken feet and place them in a bowl.

    Add 0.5 liters of water and ice to the chicken feet, soak the chicken feet in ice for about 15 minutes to help them become crispier. Then take them out and use paper towels to dry the chicken feet.

    Put the chicken feet in a bowl with 40g of crispy frying flour, cover with plastic wrap, and shake well to coat the chicken feet evenly with the flour.

    Heat oil in a pan, when the oil is hot, add the chicken feet and fry evenly until they are golden and crispy, then add the smashed lemongrass and chopped garlic, fry for a little longer, then turn off the heat and remove the chicken feet and lemongrass.

  • Coating with salt and chili

    Add 1.5 teaspoons of salt, minced chili, and 1 teaspoon of chili powder into the pan and fry on low heat until the salt and chili are fragrant, then turn off the heat.

    Add the salt and chili mixture to the freshly fried chicken, seal it with plastic wrap, and shake to coat the chicken feet evenly. Finally, transfer to a plate and garnish.

How to choose delicious chicken feet

  • Chicken feet should be purchased from reputable stores that ensure food safety and hygiene.
  • It is advisable to buy chicken feet that have a natural pinkish-white color, with no unusual colored spots on the skin such as: green, red, or yellow.
  • If you touch them and feel slimy, or if any strange liquid is oozing out, do not buy them.
  • Water-injected chicken feet have an even and beautiful appearance, plump, with the toes swollen; squeezing them with your hand will feel soft. Normal chicken feet are small and unattractive, with 4 toes bent inward.
  • There are two types of chicken feet: native chicken feet and industrial chicken feet, with industrial chicken feet being more popular due to having more meat and being convenient for making deboned chicken feet dishes.
  • You can buy pre-deboned chicken feet or buy them to debone at home!
