How to Cook Turmeric Salmon

  • Prepare and Marinate the Salmon

    Buy salmon, scale it, wash it thoroughly, and then cut it into bite-sized pieces about 2 finger lengths.

    Put the salmon into a bowl, marinate the salmon with 1 teaspoon of sesame oil, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1 teaspoon of fish sauce, 1 teaspoon of sugar, mix well and let it marinate for 15 minutes.

  • Prepare the Other Ingredients

    Peel the ginger, wash it clean, and cut it into strips. Wash the green onions and slice them diagonally. Wash the shallots and cut them into halves.

    Peel the purple onion and slice it. Peel the garlic and mince it. Cut the lemongrass into slices and mince it.

    Peel the shallots, slice them, and then chop them finely. Peel the garlic, crush it, and then chop it finely.

    In the pan with the fried fish, when the fish is evenly golden, add shallots and garlic to stir-fry until fragrant, then add the caramel and the fried salmon.

    Next, pour boiling water over the fish until it is submerged, simmer on low heat until the stew boils, season the fish with 2 tablespoons of soy sauce, 1 tablespoon of fish sauce, and gently stir the fish with a spoon to absorb the seasoning.

    Increase the heat until the stew thickens, adjust seasoning to taste, add pepper and sliced chili, then turn off the stove.

    Tip: When stewing fish, you should add boiling water to prevent the fish from being fishy.

  • Good quality salmon will have bright pink or orange flesh, dry and not slimy. Additionally, the fish’s stripes should be evenly colored and bright.
  • It should feel firm to the touch and have good elasticity. If you press it and it leaves an indentation but quickly returns to its original state, the salmon is still fresh.
  • Moreover, choose fish that has a natural fishy smell, without any strong or foul odors.
  • Avoid selecting fish that is dark in color, dull, and has tiny brown spots on the surface, as it indicates that the fish has spoiled and is no longer usable.
