How to cook Quail Eggs with Tofu

  • Prepare the ingredients

    Peel the shallots and garlic, then mince 2 shallots and 2 cloves of garlic.

    Peel the onion and cut it into wedges. For the green onions, remove the roots, wash them clean, and cut them into pieces. Wash the chili peppers and remove the stems.

    Place a pan on the stove with 250ml of cooking oil over medium heat. When the oil is hot, reduce to low heat, then add 5 pieces of tofu that have been cut and fry for 7 – 10 minutes until golden brown on both sides, then turn off the heat and place on a plate to drain the oil.

    Next, put a pot on the stove with 500ml of water over high heat. When the water boils, add 30 quail eggs and boil for 15 – 20 minutes, until the eggs are cooked, then turn off the heat, transfer to a bowl of cold water to cool for 5 – 10 minutes, then peel the shells.

  • Prepare the sauce

    Prepare a bowl and add 3 tablespoons of sugar, 2 tablespoons of seasoning, 4 tablespoons of fish sauce, and 1/2 teaspoon of ground pepper, then mix all together.

  • Prepare the ingredients

    For green onions, remove the roots, cut off the tops, wash thoroughly and let dry, then chop finely. As for the shallots, peel them and slice them thinly.

    Next, place another pot on the stove with 2 teaspoons (10ml) of cooking oil and 1 sliced red onion to sauté until fragrant.

    Then, add the entire amount of fried tofu and quail eggs and stir-fry for about 3 minutes. Continue by seasoning with 2 tablespoons of fish sauce, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of soy sauce, and 1 teaspoon of coconut colorant, then use chopsticks to mix everything together and stew for about 15 – 20 minutes.

    Finally, when the tofu and quail eggs are cooked and tender, taste and adjust the seasoning, then turn off the heat and serve on a plate.
