Mackerel 4 fish (about 1kg) Ginger 1 piece Shallots 3 pieces Garlic 3 cloves Green onions 3 stalks Chili 2 pieces Fish sauce 1 teaspoon Cooking oil 6 tablespoons Common spices a little (Salt/ seasoning powder/ monosodium glutamate/ pepper)

How to Cook Ginger Braised Mackerel

  • Prepare Ingredients

    Peel the ginger, wash it clean, drain, slice it thinly, then cut into strips. Peel the shallots and garlic, then chop finely.

    Remove the tough roots from the green onions, chop the green tops separately, and cut the leaves into small pieces. Wash the chili and chop it finely.

  • Prepare and marinate mackerel

    After purchasing, gut the mackerel and wash it with diluted salt water, then rinse again with cold water to clean and drain.

    Marinate the fish with 1/2 of the minced shallots, 1/2 of the minced garlic, 1/2 of the green onions, 1/2 of the chili, 1 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of monosodium glutamate, mix well and let it marinate for 15 minutes.

  • Fry the fish

    Place a pan on the stove over medium heat, add 5 tablespoons of cooking oil.

    Wait for the oil to heat up, then add 1/2 of the sliced ginger, add the mackerel and fry on low heat for about 10 minutes until both sides are golden, then remove to a plate.

  • Stew the fish

    Place another pan on the stove over medium heat, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add the shallots, minced garlic, green onions, and the remaining ginger to sauté until fragrant.

    When the shallots and garlic are fragrant, add 100ml of water, bring to a boil, then add the mackerel to stew on low heat for about 10 minutes until the sauce thickens slightly, then add 1 teaspoon of fish sauce.

    Taste and adjust the seasoning as needed, add the green onion leaves and the remaining chili, turn off the heat and enjoy.

  • Prepare the mackerel

    After buying the mackerel, wash it thoroughly, cut off the head, and gut the fish.

    Use salt to rub inside and outside, wash the fish again with clean water 2 – 3 times, let it drain, and use a knife to make a few slits on the fish’s body.

    Heat a pan on the stove over medium heat, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add the mackerel and fry on low heat for about 10 minutes until both sides are golden brown.
