What is Mozzarella cheese?

  • Mozzarella is also a traditional cheese originating from Italy.
  • Mozzarella cheese falls under the cream cheese category, primarily made from buffalo or cow’s milk, with a white or slightly yellow color.
  • This type of cheese is often sold in shredded form when dry or sliced when fresh.

How to make Mozzarella cheese stuffed rice cake

  • Mixing and kneading the dough

    You put 100g of rice flour, 80g of glutinous rice flour, 20g of tapioca starch, 1/3 teaspoon of salt, and 2 tablespoons of cooking oil into a bowl and mix the mixture well.

    Next, you gradually add hot water, using a spoon to mix the mixture evenly, then knead the dough into a smooth, non-sticky mass. Use plastic wrap to cover the dough and let it rest for about 15 minutes.

    Note:

    • The amount of water can vary depending on the water absorption of the flour. The dough should not be too dry (if you hold it, it crumbles easily) or too wet (it feels runny).
    • If the dough is too dry or wet, you can fix it by adding dry flour or adding a little water at a time to adjust.

  • Dough division and cheese filling

    You cut 100g of mozzarella cheese into many small pieces about 1/2 finger thick.

    Next, you roll the dough into a ball, then slightly flatten it down and divide the dough into 12 small pieces.

    Then, carefully shape the flattened dough, place 1 piece of mozzarella cheese in the center, and roll the dough back up so that the cheese is snugly inside. Do the same for the remaining dough and cheese!

    Tip: You need to seal the dough tightly so that air doesn’t get trapped inside the cake; otherwise, it will easily crack or break when steamed. You can adjust the size of the cake to your taste; however, don’t make it too big, or it will be quickly overwhelming.

  • Steaming rice cakes

    You arrange the rice cakes in a steamer and place it on the stove to steam over medium heat for about 7 – 10 minutes until the rice cakes are soft and cooked.

    Small tip: If your family doesn’t have a steamer, you can boil the rice cakes for about 8 – 10 minutes and then remove them to drain.

    The rice cake has a soft and chewy outer layer, biting into the rich melted mozzarella cheese. The rice cake will taste better if you stir-fry it with chili sauce, add a little sausage and egg, or sprinkle cheese on top!

How to make cheese-filled rice cakes

  • Mixing and kneading the dough

    Put 100g of rice flour, 1 tablespoon of sesame oil, and 1/4 teaspoon of salt into a bowl, and mix the ingredients well.

    Next, gradually add boiling water while kneading until the dough becomes smooth and elastic, not too crumbly or runny.

  • Steaming the dough

    Place the dough in a bowl, cover tightly with plastic wrap, and steam in the steamer for about 15 minutes over medium heat until the dough is soft and cooked.

    Take the dough out, add 1 tablespoon of cooking oil, and then use a pestle to grind it until smooth.

    Tip: To make the rice flour smooth and elastic, you should grind the dough for a little longer!

    The cheese should be cut into strips, about the width of one finger.

    Place the dough on a cutting board, apply a little cooking oil underneath and add the dry dough on top, then divide it into small pieces, and use a rolling pin to flatten the dough.

    Next, place a piece of cheese in the center and roll it up, then fold the ends of the dough tightly! Do the same until you run out of dough and cheese.

    Note: To prevent the dough from sticking to the cutting board, you should cover the board with plastic wrap!

  • Boiling the rice cake

    Add 1 liter of water to a pot and bring it to a boil, then add the rice cakes and boil for about 10 minutes over medium heat until the rice cakes are cooked. During the boiling process, gently stir the rice cakes with chopsticks to prevent them from sticking together!

    Once cooked, remove them and place them in a bowl of cold water for about 3 – 5 minutes, then take them out to drain!

    The cheese stuffed rice cake has a soft and chewy outer layer, with melted cheese that is fragrant and rich. The rice cake will taste better if served with a sauce made from Korean chili sauce mixed with sesame oil, or pan-fried rice cakes dipped in soy sauce. This dish is perfect for entertaining friends or your little ones!
