Mixing and kneading the dough
You put 100g of rice flour, 80g of glutinous rice flour, 20g of tapioca starch, 1/3 teaspoon of salt, and 2 tablespoons of cooking oil into a bowl and mix the mixture well.
Next, you gradually add hot water, using a spoon to mix the mixture evenly, then knead the dough into a smooth, non-sticky mass. Use plastic wrap to cover the dough and let it rest for about 15 minutes.
Note:
- The amount of water can vary depending on the water absorption of the flour. The dough should not be too dry (if you hold it, it crumbles easily) or too wet (it feels runny).
- If the dough is too dry or wet, you can fix it by adding dry flour or adding a little water at a time to adjust.

Dough division and cheese filling
You cut 100g of mozzarella cheese into many small pieces about 1/2 finger thick.
Next, you roll the dough into a ball, then slightly flatten it down and divide the dough into 12 small pieces.

Next, gradually add boiling water while kneading until the dough becomes smooth and elastic, not too crumbly or runny.

Place the dough in a bowl, cover tightly with plastic wrap, and steam in the steamer for about 15 minutes over medium heat until the dough is soft and cooked.
Take the dough out, add 1 tablespoon of cooking oil, and then use a pestle to grind it until smooth.
Tip: To make the rice flour smooth and elastic, you should grind the dough for a little longer!

The cheese should be cut into strips, about the width of one finger.
