Prepare the pigeon
To eliminate the odor and clean the pigeon meat, after buying it, you should pluck the feathers, remove the entrails, leaving only the meat, then rub the pigeon with a little salt and rinse it thoroughly with water and let it drain.
To make the pigeon skin crispy and the meat fragrant when stir-frying, prepare a charcoal stove and roast the pigeon meat over the fire for about 4 – 5 minutes.
Next, rinse the pigeon again with clean water and cut it into bite-sized pieces, about the size of a finger.

You put 2 tablespoons of cooking oil in a pan, place the pan on the stove, turn on medium heat to heat the oil, then add the remaining shallots to sauté until fragrant.
