  • Do not choose pods that are soft or have bruises on the outside, as well as those that are too large, as they will be mature okra and not tasty.

How to prepare Grilled Goat with Satay

  • Prepare the ingredients

    To reduce the smell of the goat ribs, you use white wine to rub all over the meat and then wash it again with clean water, and let it dry.

    Then, cut the goat ribs into bite-sized pieces.

    Cut off the ends of the okra, wash it clean, and let it dry. Take 50 grams of fermented tofu, put it in a bowl, and mash it to make a dipping sauce.

  • Marinate the goat meat

    Put the goat ribs in a basin, marinate with 1 teaspoon of MSG, 2 teaspoons of seasoning, 100 grams of fermented tofu, 100 grams of satay, mix and rub well for the spices to blend.

    Let it sit for about 1 hour for the goat meat to absorb the spices, then proceed to grill the meat.

    After about 1 hour of marinating the goat ribs, add the okra and mix well.

    Heat the charcoal grill and place each piece of goat meat on the grill to cook. Every 2 – 3 minutes, flip the goat meat. Grill for about 20 minutes until the goat meat is thoroughly cooked and fragrant with satay.

    During the grilling process, place the okra to one side and grill it as well.

    Tip: If you don’t have space to prepare a grill and grilling rack, you can also grill the goat ribs using an electric grill or an oven (preheat the oven at 200 degrees Celsius for 10 minutes, then place the goat meat in and grill at 220 degrees Celsius for 20 – 25 minutes)!

How to Make Grilled Goat with Five Spices

  • Prepare the Ingredients

    First, crush 1/2 a ginger root. Next, to eliminate the smell from the goat meat, use the crushed ginger and white wine to rub all over the goat ribs for about 15 minutes, then rinse with clean water and let it drain.

    Peel and slice the shallots thinly. Peel and slice the remaining 1/2 ginger root. Rinse the green pepper and keep the seeds. Peel off the outer layer of the lemongrass, rinse it clean, and chop it finely. Remove the stems from the chili and chop it small.

    Then, place all the shallots, ginger, lemongrass, and chili on the cutting board and finely chop them, then mix with the green pepper.

  • Marinate goat meat

    Make a marinade by mixing shallots, chili, lemongrass, ginger, green pepper with 1 tablespoon of sugar, 1 tablespoon of five-spice powder, 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of seasoning powder, 1 tablespoon of cooking oil, 1 tablespoon of annatto oil, 1 tablespoon of chili sauce, and 1 teaspoon of chili powder, then stir well.

    Wear gloves and evenly spread the marinade over the ribs, then wrap the ribs in aluminum foil and place them in the refrigerator refrigerator for about 3 hours to let the ribs absorb the seasoning.

  • Grilled Goat Meat

    After marinating the ribs for 3 hours, you take the ribs to grill.

    Put the ribs wrapped in aluminum foil into the oven, set the temperature to 200 degrees Celsius, with both top and bottom heating elements and convection fan, and grill the ribs for 1 hour.

    After 1 hour, you take the ribs out, unwrap the aluminum foil and place it under the rib piece.

    Make a seasoning mixture to brush on the ribs by mixing 1 tablespoon of oyster sauce with 1 tablespoon of chili sauce, 1 tablespoon of ketchup, 1 tablespoon of annatto oil, and 2 tablespoons of soy sauce.

    You use a brush to evenly spread the seasoning mixture on the rib piece. Then, grill the ribs at 230 degrees Celsius, with both top and bottom heating elements and convection fan for 15 minutes.

    After 15 minutes, you flip the rib piece over, continue to spread the remaining seasoning mixture on top and grill the ribs for another 15 minutes to finish.

How to choose fresh and delicious goat meat/ goat ribs

  • You should choose young goat meat to reduce the strong goat smell. Young goat meat has a pinkish-red color, tender and firm texture, elastic, and does not stick to your hands, with no strange odor.
  • Goat meat that has been kept for too long or from sick goats will have a strange smell, mushy texture, slimy, and a pale green color; you should not buy it.
  • When purchasing, ask the seller to cut the goat meat in half and smell it; goat meat will have a distinct, strong smell that hits your nose directly.
  • Use your fingernail to press the goat skin; if the skin punctures, it is young goat, if the skin is thick and does not puncture, it is an old goat, which will be very chewy.
  • For goat ribs: you should choose the type that has both bone and meat so that the meat does not fall apart during cooking but still retains good flavor; typically, these rib pieces have flat and small bones.
