White radish 500 gr (2 pieces) Lime water 100 ml (about 1 cup) Vanilla powder 2 gr (or vanilla extract) Sugar 200 gr

How to Make Shredded White Radish Jam

  • Prepare the white radish

    Peel the white radish, wash it thoroughly, and then shred it into long strips.

    Next, prepare a bowl of water and add 1 cup of lime water, add the radish and soak it in water for about 1 hour, then take it out and rinse it with clean water 3 – 4 times.

    Tip: Soaking the radish in lime water will help the jam become chewy, white, and tastier.

  • Blanch and soak in sugar

    Prepare a pot of boiling water, add the white radish to blanch for about 2 minutes, then rinse with cold water and drain.

    Put the radish in a bowl, add 200g of sugar and mix well, let it marinate for about 2 hours for the radish to absorb the sugar.

  • Cook the jam

    Next, add the radish and the sugar water into a pan and cook over medium heat, gently stirring for about 15 minutes.

    When the jam is nearly dry, reduce the heat and add vanilla, continue stirring continuously until crystallized sugar appears on the bottom of the pan and on the jam, then turn off the stove and keep stirring for another 5 – 10 minutes.

    Arrange the jam on a tray and sun-dry for about 2 hours before enjoying!

    Tip: If you don’t have time to sun-dry, you can put it in a oven or an air fryer to dry at 100 degrees Celsius for 15 minutes.

How to Make White Radish Flower Jam

  • Carving White Radish Flowers

    Peel the white radish, wash it clean, and then cut it into round slices about 1/2 finger thick.

    Next, make a small circular cut in the middle of the radish slice, about 1/2 the thickness of the radish to create the flower’s stamen, then skillfully carve away the outer edge of the stamen and carve the petals.

    Another way to make the flower is to cut round slices of the radish about 1/4 finger thick, carve the petals, and then cut out a circle inside to create the stamen.

  • Soaking the White Radish

    Next, soak the carved radish in a bowl of water mixed with 40g of salt for 30 minutes, then wash it 1 – 2 times with clean water and let it drain.

  • Pickling the radish with sugar

    You divide the radish into 2 parts, one part you pickle with 150g of sugar, and the other part you pickle with 10ml of grapefruit juice and 150g of sugar.

    You mix well and let it marinate for 4 hours for the radish to absorb the seasoning.

  • Cooking the jam

    Next, you gradually cook each part of the radish, adding the radish and sugar water into a pan and cook over medium heat, stirring gently for about 15 minutes.

    At this point, when the jam is nearly dry, you reduce the heat and add the grapefruit extract, continuing to stir constantly until sugar crystals form on the bottom of the pan and on the jam, then turn off the stove and stir for another 10 minutes.

    You do the same with the grapefruit-colored radish jam, and you’re done!
