  • You should choose those carrots that are slender, of moderate size, with leaves still attached, and feel firm—not too soft. Avoid selecting carrots that are bruised, have cracks, or are missing a part.

  • Choose carrots that have an even orange color; avoid those that are too dark, which may indicate they’ve been treated with chemicals.

  • You should choose bean sprouts that have many long roots. Traditional bean sprouts take about a week to grow, which is why they have long roots. Chemical-soaked bean sprouts have only short, dark roots.
  • Choose bean sprouts that are not too plump and uneven. Avoid choosing bean sprouts with unusually long stems. Chemical-soaked bean sprouts typically appear large and visually appealing. In contrast, traditional bean sprouts are smaller, longer, and have uneven stems.
  • Choose bean sprouts with curved, non-shiny stems. Traditional bean sprouts usually do not use chemicals, so they do not look as appealing, while chemically treated bean sprouts are plump, shiny, and have very straight stems.

How to prepare Teriyaki salmon spring rolls

  • Blanch the rice noodles

    Pour 500ml of water into a pot, place it on the stove to boil. When the water is boiling, add 150g of rice noodles and blanch for about 5 minutes until the noodles are cooked. Then, remove the noodles and rinse them under cold water to drain.

    Once the noodles are drained and cooled, use scissors to cut them into smaller pieces for easier rolling.

  • Prepare the salmon

    Wash the salmon and drain. Then use a knife to remove the skin and slice it into pieces about 0.5cm thick.

    Carrots should be washed, peeled, and shredded into small strips. Place the carrots in a bowl and marinate with 10ml of white rice vinegar, 1/4 teaspoon of salt, and 1 teaspoon of sugar, mixing well to allow the carrots to absorb the flavors.

    Lettuce should have any spoiled leaves removed, be washed thoroughly, soaked in diluted salt water for 10 minutes, then rinsed again and drained. Bean sprouts should also be washed and drained.

    For herbs: mint, Vietnamese coriander, sawtooth coriander, cilantro, and green onions, remove any spoiled leaves, wash thoroughly, and drain.

    Cucumbers should be washed, both ends trimmed, then sliced into circular rounds placed in a straight line, and continue cutting into small strips.

    • You can cut the cucumber lengthwise, sprinkle a little salt on it, then rub the two halves together until white foam appears. Rinse again and it’s ready to use.

  • Making Teriyaki salmon

    Heat a pan on the stove, add 2 tablespoons of cooking oil and let it heat up.

    Once the oil is hot, add the pieces of salmon to fry. When the salmon is cooked, flip the pieces over, and add 3 tablespoons of teriyaki sauce, drizzling the sauce evenly over the fish and turning it again to let it soak up the sauce.

    Then sprinkle 10g of sesame on top, and turn off the heat to let the fish cool.

    You take a clean cloth, dampen it with water, and wring it out. Spread the cloth on a clean cutting board, then take a rice paper, dip it in a basin of water, and place it on the cloth.

    Gradually add lettuce, rice noodles, bean sprouts, thinly sliced cucumber, pickled carrots, mint, coriander, Vietnamese balm, cilantro, and 2 slices of salmon in the center of the rice paper, then fold the sides of the rice paper over. After that, add a few green onion stems on top and slowly roll the rice paper up.

    Your tip: You should not soak the rice paper in water for too long as it will become too soft, making it difficult to roll and the finished product will not be beautiful.

You can use whole salmon or salmon fillets, both are fine!

  • Salmon body: check the scales and skin of the fish to ensure they are shiny and glossy. The fish body should not have scratches, bruises, and the scales should not be peeling off.

For salmon fillets

  • It is best to buy salmon that has a bright orange color, with evenly distributed, bright white fat lines that are smooth, without any signs of darkening or unpleasant smell. Fresh salmon fillets should not be mushy, and the fish should have a certain firmness.
  • You should avoid choosing pieces of fish that are mushy, pale in color, or have cloudy fat lines because that indicates the fish has been stored for too long and is not good.

How to remove the fishy smell from salmon

Salmon has a distinctive flavor, but to enjoy the authentic taste, you need to know how to eliminate the fishy smell of salmon. You can refer to one of the following methods:

Method 1: Remove the fishy smell of salmon with lemon

  • Add 2 – 3 tablespoons of lemon juice and 1 teaspoon of salt to a bowl of water.
  • Put the salmon in and gently stir, letting it sit for about 30 seconds to 1 minute, then rinse with clean water. You can also use lemon slices to rub and gently massage the fish meat for a cleaner result.

  • Place the fish meat in a bowl and pour fresh milk over it until the fish is fully submerged.
