How to make Pickled figs with garlic and chili

  • Mix the fish sauce for pickling figs

    You put into a bowl 1 cup of fish sauce, 2 cups of water, 1/2 teaspoon of MSG and stir well until the MSG is mostly dissolved.

  • Prepare the ingredients

    After buying the figs, wash them thoroughly and soak them in diluted salt water for about 20 minutes to remove the bitterness, then wash them again!

    Remove the stems from the chilies, peel the garlic, and wash them clean, then let them drain.

How to Prepare Pickled Sung with Fish Sauce

  • Pound the Spices

    First, you put into the mortar 1/2 cup of sliced bird’s eye chili, 1/2 cup of sliced horn chili, 15 cloves of garlic, 2 tablespoons of sliced lemongrass, 2 tablespoons of sliced galangal, and use a pestle to pound until the ingredients are well mixed together as shown.

  • Mix the Fish Sauce

    You add to a bowl 120gr of granulated sugar, 120ml of fish sauce, 50ml of filtered water, 50ml of calamondin juice, 1 tablespoon of shredded kaffir lime leaves, 100gr of halved calamondin, and stir well to dissolve some of the sugar.

  • Prepare the figs

    The figs you bought should be soaked in diluted salt water, then washed thoroughly and drained.
