How to Make Durian Sweet Soup

  • Make Coconut Milk

    You place a pot on the stove over medium heat, add 500ml of filtered water, 250ml of unsweetened fresh milk, 100ml of coconut milk, 50ml of whipping cream, 180gr of granulated sugar, 1 teaspoon of salt, and 200gr of creamer.

    Then, you lower the heat, add a bunch of pandan leaves, and stir gently for 10 minutes, then taste and adjust the seasoning to your liking before turning off the heat.

  • Making coconut pearls

    You put 200gr of diced coconut meat into a bowl, add 100ml of strawberry syrup, use a spoon to mix well and let it soak for 10 minutes.

    Then you transfer the coconut meat to another bowl to drain some syrup, then add 100gr of tapioca flour and mix well, sifting out the excess flour.

    Place a pot of water on the stove over medium heat to boil, when the water boils, add the coconut meat coated with tapioca flour to the pot, cook for about 5 minutes until the coconut pearls become translucent, then transfer them to a bowl of cold ice water and soak for 15 minutes, then drain.

  • Making accompanying jelly

    You put 700ml of filtered water into a pot, add 10gr of agar powder, stir well with a whisk and let it soak for 30 minutes for the powder to expand.

    Then you place the pot of agar on the stove and cook over medium heat for 20 minutes, stirring gently while cooking, then add 80gr of sugar, 1 bunch of pandan leaves, stir well for another 10 minutes, then turn off the heat and pour into a mold, wait for it to set, then cut into small pieces for serving.

    If you like, you can blend some pandan leaf extract to make the dish more appealing.

  • Prepare the Ingredients

    Durian: Cut the durian fruit, separate the segments, remove the seeds, and blend the durian flesh with 100ml of sweetened milk until smooth.

    Jackfruit: Choose jackfruit with thick, bright yellow segments and a sweet flavor. After removing the seeds, tear the jackfruit into small, bite-sized pieces.

    Rambutan: Remove the skin and seeds, take the flesh.

    Longan: Remove the skin and seeds, take the flesh.

    Green beans: Soak the green beans for 6 – 8 hours, preferably overnight to save time. To enhance the flavor of the green beans, add a little salt while soaking.

    After soaking the mung beans properly, rinse them with clean water once more and mix with 100g of sugar.

    Put them into a rice cooker to cook or steam using a gas stove, electric stove until the beans are cooked evenly. Then use a spoon (or a blender) to mash the mung beans until smooth.

  • Prepare the ingredients

    Green beans soaked for 6-8 hours, it is best to soak overnight to save waiting time. To make the green beans more flavorful, add a little salt while soaking.

    Remove the seeds from the durian to get the durian flesh and place it on a plate.

How to choose delicious durian

  • When making durian tea, choose ripe fruits, do not choose unripe ones.
