Quang noodles 150 gr Snow mushrooms 1 pack (150gr) Chicken leg mushrooms 1 piece (large) Fried tofu 10 pieces Fried bread 15 pieces Roasted peanuts a little Chopped scallions 1 tablespoon (finely chopped) Red chili 1 piece Accompanying vegetables a little (Thai basil / banana blossom / cabbage) Cooking oil 4 tablespoons Salt a little Sugar 1.5 tablespoons Soy sauce 3 tablespoons Vegetarian seasoning 1 tablespoon Vegetarian fish sauce 4 tablespoons

How to choose fresh, delicious mushrooms

  • For chicken leg mushrooms and snow white mushrooms, choose whole mushrooms, with white stems and round caps.
  • The mushrooms should feel light and spongy, with firm, non-wilted stems that are not shriveled. If you gently press the mushroom’s body and it feels soft and elastic, it is still fresh.
  • Choose dry mushrooms that have not been watered.
  • Smell the mushrooms; if they have a light, distinctive fragrance, they are fresh and delicious. Absolutely avoid mushrooms with a sour, unusual smell to prevent food poisoning.
  • You should not choose mushrooms that have cuts, dark spots, or those with signs of green mold. Additionally, limit the selection of mushrooms that are wet, as they will bruise and spoil quickly.

Quang noodles

  • Quang noodles are usually made from finely ground rice flour mixed with water from gardenia seeds and eggs for a yellow color, and are layered into thin sheets about 1 cm thick. Quang noodles are thicker and chewier compared to pho or vermicelli.

Fried tofu

  • For pre-made fried tofu, make sure to choose medium-fried tofu, and limit the purchase of crispy fried tofu. To be safer, you can buy packaged fried tofu in supermarkets; before cooking, just cut and fry it lightly again.

Fried bread

You can buy crispy fried bread at the market or at shops specializing in bread. You can buy a loaf of bread, cut it into small square pieces, and then deep-fry it until golden and crispy.

How to make Vegetarian Mixed Noodles

  • Prepare the ingredients

    Chicken thigh mushrooms and snow mushrooms should be cut at the base, washed clean, and soaked in salt for about 5 – 7 minutes. Then take them out and use paper towels to absorb any excess water. Slice the chicken thigh mushrooms lengthwise into pieces equal in size to the snow mushrooms.

    Chop the roots off the green onions, wash them thoroughly, and finely chop the green onion tops.

    Chop the red chili.

    Wash the fresh herbs, soak them in salt, then wash them again and drain in a basket.

  • Sauté the green onions

    Add 2 tablespoons of cooking oil to a hot pan. When the oil is shimmering, add 1/2 tablespoon of chopped green onions and stir well.

    When the green onions start to release their aroma but haven’t turned golden yet, scoop out 1 tablespoon of onion oil into the bowl containing the mixed noodles. Then, mix well so that the noodles absorb the oil evenly.

  • Sauté the mushrooms

    In the pan with sautéed shallots, add the snow mushrooms and chicken leg mushrooms, stir-frying together with 2 tablespoons of vegetarian fish sauce, 1 tablespoon of soy sauce, 1/2 tablespoon of vegetarian seasoning, and 1/2 tablespoon of sugar.

    Sauté until the mushrooms are soft and fragrant, and you see liquid from the mushrooms in the pan. After sautéing, transfer the mushrooms to a plate and proceed to the next step.

  • Make the Quang noodle sauce

    Utilizing the pan used for sautéing the mushrooms, add 2 tablespoons of cooking oil. When the oil is bubbling, add 1/2 tablespoon of shallots to sauté until fragrant.

    Next, add 2 tablespoons of soy sauce, 2 tablespoons of vegetarian fish sauce, 1/2 tablespoon of seasoning, and 1 tablespoon of sugar into the pan. Stir well to dissolve the mixture.

    Simmer for about 3 – 5 minutes until the mixture boils, then add 1 chopped red chili, stir well, then turn off the heat and pour the sauce mixture into a bowl.
