How to choose fresh chicken

For live chickens:

  • You should choose to buy chickens that are healthy, move actively, have smooth feathers with a certain shine, and their eyes and nostrils should not be runny.
  • Avoid buying chickens that appear lethargic, with their tails drooping and moving slowly, with ruffled body feathers, standing head feathers, and slightly damp. These are chickens that have been infected with diseases.

For pre-slaughtered chickens

  • You should choose chickens with characteristic golden skin. The outer skin should be thin, feel smooth to the touch, not too bumpy, and have good elasticity.
  • The meat inside the chicken should have a natural pinkish-red color, not too pale or too dark. In particular, the chicken meat should not have any bruises or blood clots. Parts of the meat that are slightly pale or turning darker gray are from chickens that died before being slaughtered.
  • When buying, carefully check the expiration date and packaging date, and prefer chicken meat with a production date closest to the purchase date. Additionally, check to see if the bag openings are intact.
  • To feel secure when buying and processing, you should choose to buy from reputable establishments like supermarkets, Bách Hóa Xanh, or trusted chicken stalls in the market.

  • Choose mustard greens that are bright green in color, with smooth, glossy leaves, free from dark spots, decay, wilting, or yellowing.
  • When you pick up the mustard greens, they should feel heavy, and the weight should correspond to their size. The stem part of the mustard greens should be light green in color, not rotten, and should not have any black or yellow spots.
  • Avoid choosing large mustard greens that feel light; these are usually old greens that have been stored for too long.

How to choose fragrant and fatty fermented tofu

  • It is recommended to buy fermented tofu packaged in earthenware or glass jars, and not in stainless steel or plastic jars, as the fermentation process may produce harmful acids.
  • When purchasing, be sure to carefully check the expiration date and the manufacturer’s information printed on the jar to avoid buying expired tofu or tofu containing unhealthy substances!

How to Prepare Steamed Chicken with Fermented Bean Sauce

  • Prepare the chicken and vegetables

    To eliminate the unpleasant smell of the chicken, use a mixture of salt and 3 tablespoons of vinegar to rub all over the chicken until it is clean and smells good, then rinse with clean water and let it drain.

    For the vegetables, remove all wilted leaves and soak them in diluted saltwater for about 3 minutes, then take them out to drain. Peel the garlic.

    • Method 1: Rub the chicken with a bit of salt, pepper, crushed ginger, and a little white wine for about 30 minutes, then rinse thoroughly.
    • Method 2: Blanch the chicken with a few pieces of crushed ginger in a pot.
    • Method 3: Rub a few slices of lemon with a little salt on the chicken, then rinse thoroughly with cold water.

  • Marinate the chicken

    Add 2 peeled garlic cloves, 2 chili peppers, and 2 tablespoons of sugar into a bowl, mash them together, then add 4 tablespoons of fermented bean sauce. Mix and mash until the sauce is smooth and evenly combines with the spices.

    Next, add the smooth fermented bean sauce into the bowl containing the chicken. Wear gloves, mix, and rub the sauce evenly onto the chicken both inside and out, marinate for about 30 minutes for the chicken to absorb the sauce.

  • Steam chicken

    Lay a layer of mustard greens at the bottom of the pot and then place the chicken on top. Add 200ml of water to the marinating bowl, swirl it around, and pour it into the pot, then cover it with a lid.

    Cook on high heat for about 2 minutes until the water boils, then reduce the heat to medium and steam for about 15 minutes. After that, add the remaining layer of mustard greens on top and continue steaming for another 3 minutes before turning off the heat. Arrange the mustard greens and chicken on a plate and enjoy!

    Tip:

    • To ensure the chicken is cooked evenly, do not open the pot lid too many times while steaming.
    • To steam the chicken more deliciously and conveniently, you should use a steamer for steaming the chicken.
    • You can use a knife to cut the thickest part of the meat to check for doneness; if the meat is still pink or has blood flowing out, you can steam it for another 10 minutes.
