Oyster meat 400 gr Shiitake mushrooms 50 gr (dried) Green onions 5 stalks Garlic 3 cloves Bird’s eye chili 1 piece Fish sauce 1 tablespoon Chili sauce 1 tablespoon Cooking oil 3 tablespoons Common seasoning a little (sugar/ seasoning powder/ pepper)

How to choose good shiitake mushrooms

  • Choose shiitake mushrooms that are of moderate size and dark brown color.
  • The mushrooms should have a shape like an umbrella, with white flesh, a cylindrical stem, and tightly curled caps.
  • Do not buy mushrooms that are dark brown, bruised, or have a strange odor.

How to prepare Stir-fried Oysters with Mushrooms

  • Prepare the oysters

    After purchasing the oysters, soak them in clean water for 2 hours so that the mud on the outside of the oysters softens, making it easier to clean them.

    After soaking the oysters, use a large brush to scrub from the hinge of the oyster shell along the curved lines to the mouth of the shell to clean it.

    Then use a knife to separate the oyster meat.

    Peel the green onions, wash thoroughly, and cut into pieces about 2 finger lengths.

    Chop the chili finely. Peel the garlic and mince it.

    • You should soak the mushrooms for about 8 hours or overnight to fully expand.
    • Cut off the hard parts and stems of the mushrooms, rinse them under running water to remove dirt, then gently squeeze to drain excess water.

    Then, add shiitake mushrooms and stir for about 2 minutes, then season with 1 tablespoon of chili sauce and chopped chili, stir-fry until the oysters are firm.

    After that, add chopped green onions and stir well, adjust the seasoning to taste, then turn off the heat, sprinkle a little pepper on top to enhance the flavor, and it’s done.

  • Avoid choosing bean sprouts that have thick, uniform stems and few roots as they may have been soaked in chemicals.
