- Shell part: Choose shells that have a tip and two closed layers, as these are live, fresh oysters.
- Oyster meat: Choose oysters whose meat remains firmly attached and fills the shell, while also containing plenty of seawater. Avoid buying oysters that are easy to open, as this indicates that the oyster is dead and the meat will not be tasty.
- Oyster meat should look fresh, juicy, and have the distinct smell of the sea.
- Avoid choosing oysters with eggs, as they will taste bitter and not be delicious.
- For oysters that have already been shucked and packaged, make sure to check the source and expiration date of the product.
- Do not choose oysters that have a foul or rotten smell, or unusual colors, as these are dead oysters.
How to prepare Stir-fried Oysters with Scallions

Prepare the oysters
After purchasing the oysters, wash them thoroughly with water and then roll the oyster meat in a layer of cornstarch to remove the slimy exterior. Continue to rinse again with water.
Next, bring a pot of boiling water to the stove, blanch the oyster meat for about 30 seconds to completely remove the sliminess, then take the oyster meat out and let it drain.
Tips for cleaning oysters, to avoid fishy smell:
- If you have time, you can soak the oysters in diluted salt water with a few chili peppers; this method helps the oysters release all the mud inside.
- After soaking the oysters, use a large brush to scrub from the hinge of the oyster shell along the curved lines to the mouth of the shell for thorough cleaning. It is best to scrub the oysters under a strong running water. While scrubbing, the water will wash away the mud stuck on the oyster shell. You won’t need to rinse many times, which is convenient and saves time.
- For large quantities, you can use a high-pressure spray nozzle to quickly wash away the mud stuck on the oyster shells.
- If using pre-packaged oysters, wash them with diluted salt water and then rinse with fresh water before cooking.

Prepare the other ingredients
Green onions should be bought, roots removed, washed clean, and cut into pieces about 1/2 finger length.
Ginger should be washed clean, peeled, dried, and sliced thinly.

Coat the oysters with batter
Roll the prepared and drained oyster meat in a thin layer of cornstarch.

Make the stir-fry sauce
Mix the sauce ingredients evenly, including 2 tablespoons of oyster sauce, 1 tablespoon of honey, 1/2 tablespoon of soy sauce, and 2 tablespoons of cooled boiled water, until the mixture is combined.

Place a pan on the stove, add 1 tablespoon of cooking oil to the pan. Wait until the oil is hot, then add all the sliced ginger and sauté until fragrant.
When the ginger is fragrant, add all the prepared oysters, stir-fry on medium heat for 5 – 7 minutes until the outer layer of the oysters turns light yellow, then add 1 tablespoon of cooking wine, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and chopped green onions, then mix well to let the oysters absorb the seasoning.
Stir-fry for about 2 more minutes, then add the entire stir-fry sauce mixture, mix well, turn off the heat, and serve on a plate to complete.
