  • Choose kohlrabi that feels heavy and firm in your hand, and select bulbs that are intact and not bruised.
  • Avoid kohlrabi with overly shiny skin, unusually dark color, lack of characteristic aroma, and those that feel soft when held.

  • Prepare and marinate the pork

    Wash the pork thoroughly and rub it with salt all over to remove dirt and impurities. Then, rinse the pork with clean water 2 – 3 times and let it drain.

    Place the sliced pork into a bowl and add 1 teaspoon of seasoning, 1/4 teaspoon of salt, and 1/2 of the sliced shallots, then mix well and marinate for 20 minutes to let the pork absorb the flavors.
