How to Make Steamed Rice Cake with Pandan Leaves – Sweet Steamed Rice Cake

Strain Pandan Leaf Extract
First, wash the pandan leaves thoroughly, let them drain, then cut 2/3 of the leaves into small pieces, leaving the remaining 1/3 whole to cook with sugar water.
Next, blend the pandan leaves with 150ml of water, then strain it through a strainer to collect the extract.

Mix Pandan Leaf Flour Mixture and Coconut Milk Flour
In a bowl, add 60g of tapioca flour, 40g of rice flour, 1/4 teaspoon of salt, 2 teaspoons of sugar, and 150ml of pandan leaf extract, then stir until the flour dissolves.
In a new bowl, add 60g of tapioca flour, 40g of rice flour, 1/4 teaspoon of salt, 2 teaspoons of sugar, 100ml of coconut milk, 50ml of water, and mix well.
Next, let both bowls of flour rest for about 30 minutes.

Stir the flour
Place a pot on the stove with 150ml of water and bring to a boil. Once the water is boiling, reduce the heat to the lowest setting and slowly pour in the coconut milk flour mixture, stirring continuously until the flour thickens slightly.
At this point, remove the pot from the heat and continue stirring until the flour becomes thick.
Next, place a new pot on the stove with 150ml of water and bring to a boil. Perform the same operation as above with the pandan leaf flour.
Note: Remember to keep the heat on the lowest setting and stir continuously to prevent the flour from burning and sticking to the bottom of the pot! -
Pouring the mold and steaming the cake
You prepare a large silicone mold, then pour the pandan leaf batter into the mold, followed by pouring the coconut milk batter on top. Use a spoon to gently mix the two mixtures to create a beautiful alternating white and green marbled pattern.
Next, place the cake mold into a steamer, cover it tightly, and steam the cake for 15 – 17 minutes starting from when the water begins to boil.
Finally, let the cake cool completely and place it in the refrigerator refrigerator for 4 – 12 hours to allow the cake to set and achieve the desired chewy and crispy texture.

Cook palm sugar and coconut milk
Place a pot on the stove, add 250g of palm sugar, 250ml of water, and 10g of sliced ginger, then cook over medium heat for 10 – 13 minutes until the sugar fully dissolves.
When the sugar has dissolved, add a small bunch of pandan leaves and cook the mixture for another minute before turning off the heat.
Place a new pot on the stove, add 200ml of coconut milk, 1/4 teaspoon of salt, 2/3 tablespoon of sugar, and 1 teaspoon of cornstarch. Stir the mixture over medium heat until it boils.
When the coconut milk boils, reduce the heat to low and stir for another minute before turning off the heat.

Completion
Remove the cake from the mold, cut into bite-sized pieces, place on a plate, drizzle with coconut milk, syrup, and sprinkle with a little toasted sesame before enjoying.
