What is tapioca starch? How to distinguish between tapioca starch and wheat flour

What is tapioca starch?

  • Tapioca starch is a type of starch processed from cassava root, usually white, fine, and fluffy.
  • Tapioca starch is used to create thickness and stickiness for dishes, commonly used in soups or in making desserts.
  • In addition, tapioca starch is often used to make chewy, soft cakes such as steamed layer cake, tapioca cake,…

How to distinguish between tapioca starch and wheat flour

  • In terms of properties, both tapioca starch and wheat flour are quite similar in color, being white. However, tapioca starch feels rough, dry, and less fine compared to wheat flour when touched.
  • When mixed with water, tapioca starch creates a thick, sticky paste. In contrast, when you mix water with wheat flour, the mixture will not be thick but will expand and have a certain stickiness.

What is rice flour? How to distinguish between regular rice flour and sticky rice flour

  • Rice flour is a type of flour made from finely grinding rice grains that have been soaked; it differs from rice starch (which is usually made by soaking rice in an alkaline solution instead of water).
  • People can use rice flour as a substitute for wheat flour in some recipes. Rice flour is commonly used in the cuisine of Asian countries, such as Vietnam, where rice flour is often used in dishes like bánh canh, bánh bò, bánh đậu xanh, bánh xèo, bún gạo, bánh cuốn, or bánh khoái.

How to distinguish between regular rice flour and sticky rice flour

  • Regular rice flour is made from common rice grains, while sticky rice flour is made from sticky rice grains (also known as glutinous rice).
  • In terms of color, regular rice flour has a cloudy white and slightly dull appearance. In contrast, sticky rice flour has a natural pure white color.
  • When using regular rice flour, it helps prevent food from drying out after cooking. For sticky rice flour, it gives the finished product a chewy texture.
  • Regular rice is often used in baked goods like: bánh canh, bánh bò, bánh ướt, bánh xèo,… While regular rice is typically used to prepare desserts, sticky rice, etc.
