How to choose fresh and delicious oysters

- Oyster meat: Choose oysters whose meat still clings tightly and fills the shell when opened, and contains a lot of seawater. Avoid oysters that open easily when separated, as this means the oyster is dead and the meat will not be tasty.
- The oyster meat should look fresh, plump, with the smell of the sea and the characteristic oyster scent.
- Avoid choosing oysters with eggs, as the meat will be bitter and not tasty.

How to make Crispy Fried Spicy Oysters

Prepare the oysters
After purchasing the oysters, wash them with water and then roll the oyster meat in a layer of cornstarch to remove the slime on the outside. Continue to rinse thoroughly with water.
Next, bring a pot of boiling water to the stove and blanch the oyster meat for about 30 seconds to completely remove the slime, then remove the oysters and let them drain.
Tip for cleaning oysters, no fishy smell:
- If you have time, you can soak the oysters in diluted salt water with a few chili peppers; this method helps the oysters release all the mud inside.
- After soaking the oysters, use a large brush to scrub from the hinge of the oyster shell along the curved lines to the mouth of the shell to clean it. It is best to scrub the oysters under running water. When scrubbing the oysters, the water will wash away the mud sticking to the oyster shell. You won’t need to rinse them multiple times, which is convenient and saves time.
- For a large quantity, you can use a high-pressure hose to quickly wash off the mud sticking to the oyster shells.
- If using pre-packaged oysters, rinse them with diluted salt water and then rinse again with water before cooking.

Mix the batter and marinate the oysters
Put 200g of crispy frying flour in a bowl, add 1 teaspoon of seasoning powder, 3 teaspoons of ground pepper, 1 teaspoon of garlic powder, 1 teaspoon of chili powder, and mix the mixture well.

Fry crispy
Place a pot on the stove and add 500ml of cooking oil.
