Prepare and debone the chicken feet
After buying the chicken feet, you should cut off the nails, peel off any remaining skin, and then rub them with salt. Next, wash thoroughly with water several times to remove any odor, then let them drain.
Then, use a sharp knife to make a cut along the chicken feet and toes, using the tip of the knife to separate the skin and tendons to keep them, while discarding the bones.
After that, cut the chicken feet into bite-sized pieces, wash the deboned chicken feet with water, and then boil them in a pot with a little sliced ginger and lemongrass for about 15 minutes until the chicken feet are cooked. Remove the chicken feet to a bowl to cool.
Quick and simple way to debone chicken feet
Step 1: Clean the chicken feet
Wash the chicken feet with diluted salt water, cut off the nails, and remove the upper part of the chicken feet, keeping only the meaty toes.
Step 2: Boil the chicken feet
Put the chicken feet in a pot, add just enough water, and then boil until the chicken feet are cooked.
When the chicken feet are cooked, immediately remove them to a bowl of ice water to keep them crispy, soak for about 10 minutes until completely cool, then remove and let them drain.
Step 3: Debone the chicken feet

Use your index and thumb to push the skin at the tip of the chicken foot down to expose the first bone joint, gradually separating the skin, bending the joints until all bones are removed, leaving the tendons intact.

Prepare other ingredients
Tear the lotus root into strips. Soak the lotus root in a bowl of diluted salt water, rinse well with water, then let it drain.
Peel the carrot, julienne it thinly, then soak the carrot with 1/2 teaspoon of salt, 1/2 teaspoon of sugar for about 20 minutes. Then squeeze the carrot to drain.
Wash the cucumber and slice it thinly. Chop the Vietnamese cilantro and mint.

Marinate chicken feet
Minced garlic and chili are added to a bowl with 1 tablespoon of fish sauce and 1 tablespoon of sugar. Stir well until the sugar dissolves.
Add 1/2 of the fish sauce mixture to the bowl of chicken feet, mix well so that the chicken feet absorb the seasoning, then let them marinate for about 15 minutes.

Mix the salad
Put lotus stems and carrots into a large bowl. Then, add the marinated chicken feet and mix well, adding Vietnamese coriander, mint, the remaining fish sauce, and 1/2 teaspoon of pepper.
Wearing plastic gloves, mix thoroughly, then squeeze lime juice into it, and adjust the seasoning to taste to complete the dish.
