How to choose fresh ingredients

How to choose fresh lotus stems

  • Good lotus stems are those that are still fresh, with stems that are not too thick or too thin.
  • The stems of the lotus have a slightly dark color or are muddy, indicating they have not been bleached and are safe to use.
  • Avoid choosing lotus stems that are wilted or bruised.

How to choose fresh chicken feet

  • You should choose chicken feet that have a natural pinkish-white color, without any green, red, or yellow spots, and they should not feel slimy when touched.
  • It is advisable to buy chicken feet from reputable suppliers with clear origins at stores selling clean food to ensure health safety.
  • You should not buy chicken feet that are too soft or have swollen toes separated, as this could be a sign that they have been injected with water.

How to choose fresh carrots

  • Choose carrots that are straight, with smooth skin, bright color, and feel firm and heavy when held.
  • Avoid choosing those with leaves or branches at the root, and those with thick, large shoulders, as these are usually carrots with large cores, which are not sweet and have fewer nutrients.
  • Do not choose carrots that are misshapen, dark in color, bruised, or have unusual spots.

How to choose fresh and delicious cucumbers without bitterness

  • To select fresh and delicious cucumbers, you should choose fruits that are straight, elongated, and evenly shaped, avoiding those that are bulging in the middle or have small ends. You should not choose cucumbers that are too large or too small, as they may be bitter.
  • Good cucumbers have intact skin, without dark spots or yellowing, and the skin is covered with a layer of white powder. You should not buy those with many bumps on the skin.
  • You should choose cucumbers with stems, fresh, and with the flower end still attached, as they are young and fresh, tasting sweeter than others. Choose cucumbers that are uniformly green; avoid those that are light yellow or very dark green, as they are often spoiled or treated with chemicals.

How to prepare Lotus Stem Chicken Feet Salad

  • Prepare and debone the chicken feet

After buying the chicken feet, you should cut off the nails, peel off any remaining skin, and then rub them with salt. Next, wash thoroughly with water several times to remove any odor, then let them drain.

Then, use a sharp knife to make a cut along the chicken feet and toes, using the tip of the knife to separate the skin and tendons to keep them, while discarding the bones.

After that, cut the chicken feet into bite-sized pieces, wash the deboned chicken feet with water, and then boil them in a pot with a little sliced ginger and lemongrass for about 15 minutes until the chicken feet are cooked. Remove the chicken feet to a bowl to cool.

Quick and simple way to debone chicken feet

Step 1: Clean the chicken feet

Wash the chicken feet with diluted salt water, cut off the nails, and remove the upper part of the chicken feet, keeping only the meaty toes.

Step 2: Boil the chicken feet

Put the chicken feet in a pot, add just enough water, and then boil until the chicken feet are cooked.

When the chicken feet are cooked, immediately remove them to a bowl of ice water to keep them crispy, soak for about 10 minutes until completely cool, then remove and let them drain.

Step 3: Debone the chicken feet

Place the feet on a cutting board, using a small knife to cut each toe and the remaining foot.

Use your index and thumb to push the skin at the tip of the chicken foot down to expose the first bone joint, gradually separating the skin, bending the joints until all bones are removed, leaving the tendons intact.
