How to Choose Good Pig Ears
- You should choose pig ears that are bright white in color; when held, they feel firm, not soft or mushy, and should not have any slimy substance.
- Fresh meat usually has good elasticity, so when you gently press on the pig ear, it should bounce back.
- Additionally, freshly slaughtered pig ears usually do not have any foul smell or unusual odors.
How to make Sweet and Sour Stir-Fried Pig Ears

Prepare the pig ears
First, wash the pig ears thoroughly with water.
To make the pig ears white and remove the smell, add 6 tablespoons of vinegar and 2 tablespoons of salt to a pot of water. Boil the water until it starts to bubble, then add the pig ears and blanch for about 2 minutes.
After that, prepare a basin of water and squeeze 1 lemon into it. Remove the pig ears and soak them in the prepared basin for 15 minutes.
After soaking, take the pig ears out and scrape off any excess skin, then cut off all the thick meat at the bottom of the ears.

Prepare other ingredients
Wash the green onions, remove the roots, and chop them finely. Peel the garlic and mince it. Slice the chili.
Dissolve the tamarind with 20 – 30ml of boiling water to let it swell.

Heat a pan on the stove with 30ml of cooking oil, wait for the oil to boil, then add the pig ears to fry until they are firm over medium heat.
After the pig ears are cooked, take them out onto a plate and continue using the pan to add 15ml of cooking oil, then sauté the garlic until golden. Once the garlic is golden, add the tamarind water that has been soaked with 20 – 30ml of hot water and stir well.
Next, season with 2 teaspoons of sugar, 1 teaspoon of salt, and 1 teaspoon of pepper; at this step, you can adjust the seasoning to suit your personal taste.
Then, add the pig ears and stir over low heat with sliced chili for about 5 – 10 minutes, adding 1 teaspoon of turmeric powder and continue stirring, allowing the pig ears to absorb the seasoning evenly.
Dissolve the tapioca starch with 20 – 30ml of water and add it to the pan with the pig ears, stirring until the sauce thickens to complete the dish.
