How to Choose Good Pig Ears

  • You should choose pig ears that are bright white in color; when held, they feel firm, not soft or mushy, and should not have any slimy substance.
  • Fresh meat usually has good elasticity, so when you gently press on the pig ear, it should bounce back.
  • Additionally, freshly slaughtered pig ears usually do not have any foul smell or unusual odors.

How to make Sweet and Sour Stir-Fried Pig Ears

  • Prepare the pig ears

First, wash the pig ears thoroughly with water.

To make the pig ears white and remove the smell, add 6 tablespoons of vinegar and 2 tablespoons of salt to a pot of water. Boil the water until it starts to bubble, then add the pig ears and blanch for about 2 minutes.

After that, prepare a basin of water and squeeze 1 lemon into it. Remove the pig ears and soak them in the prepared basin for 15 minutes.

After soaking, take the pig ears out and scrape off any excess skin, then cut off all the thick meat at the bottom of the ears.
