    Use a sharp knife to cut off the pineapple skin and eyes. Cut the pineapple in half, then slice into 1cm thick rounds. Remove the tough core from each piece.

    Place 3 – 4 slices of fried pineapple on each plate and sprinkle the mixture of lime sugar and crushed basil leaves along with shredded coconut on top. Serve with a bit of yogurt on the side, and squeeze a little lime just before eating.

Tips for Choosing Delicious Pineapples:

  • Color: Choose fruits that have bright yellow color from the crown to the tail. There may still be a few slightly green eyes, but it still has a certain sweetness. Remember, pineapples that are uniformly yellow have a higher sweetness.
  • Shape: round and short pineapples will have more flesh compared to long cylindrical ones.
  • Touch: Good, fresh pineapples are neither too hard nor too soft; pressing your finger into them shouldn’t leave a dent.
  • Pineapple eyes: The larger and sparser the eyes, the better. Because after peeling off the eyes, you will have thick pineapple flesh, and large, sparse eyes indicate that the pineapple is mature and naturally ripe, not chemically treated.
  • Fragrance: You can smell the end of the pineapple to test its freshness and ripeness. If it has a fragrant smell, it’s best to choose it; avoid those with little or no smell as they are not ripe. Also, do not choose fruits that smell slightly sour, as they are overripe.
  • Pineapple crown: The brighter the green color, the fresher the pineapple. If the pineapples are overripe, the crown will be dry or turn brown.
