How to choose fresh ingredients
How to choose quality pork
- Fresh and delicious pork is characterized by a light pink color, firm texture, slightly dry cuts, no sliminess, and no unusual foul smell.
- Quality pork will have a translucent white layer of fat, and when held, it should feel firm without any multicolored spots on the skin.
- Avoid buying pork that has a pale color, a mushy texture, and releases liquid when cut, as these are signs of poor quality or chemically treated meat.
- To check the quality of pork, press on the lean part with your hand; if the meat deforms or there is a dent with yellow fluid leaking out, it indicates spoiled meat that should not be used.
How to choose fresh shrimp
- Fresh and delicious shrimp typically have a translucent appearance, not cloudy, with the head firmly attached to the body, no unusual fishy smell, and no sliminess.
- Signs of fresh shrimp include tightly closed tails that are aligned, and the body is straight, while spoiled shrimp have a curved body shape.
- Avoid selecting shrimp with a plump body but little meat, legs detached from the body, or roe leaking out because these are signs of spoiled shrimp that have been chemically treated.
How to choose safe chicken bones
- Quality chicken bones will have a slight fishy smell, the surrounding meat will be a light pink color, without a rotten smell, and should not be slimy or have black spots.
- If buying frozen chicken bones, pay close attention to the information on the product packaging such as the production date and expiration date. Parts of the bones that are close to expiration will not have a long shelf life and will not taste good when cooked.
- Currently, packaged chicken bones are being sold at reputable business establishments such as supermarkets and the TasteVN store system, making it more convenient for you to prepare dishes and easily check the information and quality of the product.

Cut the chicken bones into bite-sized pieces.
Next, add the quail eggs to the pot, boil for 5 minutes, remove and place in a bowl of cold water, wait for the eggs to cool and then peel. Peel the shrimp, wash them clean, then blanch them briefly in boiling water and drain. The fish cake is cut into bite-sized pieces about 1/2 finger thick.
