How to choose fresh noodles and good wonton wrappers

Prepare the ingredients
Pork bones should be soaked in diluted salt water for about 5 minutes to remove the smell, then rinse thoroughly with several rounds of water and let drain.
Dried shrimp should be soaked in warm water for about 15 minutes until they swell and soften, then rinse thoroughly with 2 – 3 rounds of water and let drain.
Clean the shrimp, remove the head and tail, boil until cooked, then peel the shell. Boil quail eggs until cooked and peel.
Peel the white radish and carrot, wash thoroughly, and cut into round pieces about 2 finger widths thick. For the carrot, use half of it and dice it.
Wash the shallots, peel, and slice thinly. Wash the coriander and chop finely.

Marinate the pork
Put the pork bones in a bowl and marinate with 1 tablespoon of minced shallots, 1 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1 teaspoon of salt, and 1 tablespoon of sugar, mix well, and let marinate for about 20 minutes for the pork bones to absorb the flavors.
Put the minced pork into a bowl, add the diced carrot along with 1 teaspoon of minced shallots, 1 tablespoon of seasoning powder, 1 teaspoon of salt, and 1 teaspoon of sugar, mix well, and let marinate for about 15 minutes.

Stir-fried pork
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up, then add 1/2 of the marinated ground pork and stir-fry over medium heat for about 15 minutes until the meat is cooked.
For the remaining pork, scoop about 1 teaspoon and place it in the center of the wonton wrapper, then wrap it up so that the meat filling does not leak out.

Cook wonton noodles
Place a pot on the stove and add 2 tablespoons of cooking oil, then add all the chopped shallots to fry until fragrant and golden, then remove to a bowl.
Next, add the pork bones and dried shrimp and stir-fry over medium heat for about 10 minutes. After that, pour 2 liters of water into the pot along with chopped white radish and carrot, lower the heat, and simmer for about 30 minutes.
After simmering the bones, season with 2 tablespoons of fish sauce, 3.5 tablespoons of sugar, 1 teaspoon of MSG, and 2 tablespoons of seasoning powder, stirring well to dissolve the seasonings, and adjust to taste before turning off the heat.
Scoop out a portion of the broth into a small pot, then add the wrapped wontons and fresh noodles to boil for about 10 – 15 minutes over medium heat.
When serving, simply place the wontons and wonton noodles into a bowl, add fresh shrimp, quail eggs, stir-fried pork bones, and minced pork. Pour the broth from the large pot over, sprinkle with fried shallots, cilantro, and a little pepper, and you can enjoy it.
Tip:
- You can boil the wontons and noodles in the broth, but it will make the broth cloudy and less tasty.
- During the broth cooking process, remember to frequently skim off the foam to make the broth clearer and more appealing.
