Prepare and marinate the beef
Wash the beef thoroughly, eliminate the odor by rinsing with diluted salt water, then take it out and rinse with clean water.
How to remove the smell of beef:- Method 1: Soak the beef in white wine for 15 minutes, then rinse with clean water.
- Method 2: Use lemon or vinegar to rub on the beef, then let it sit for 5 – 7 minutes before rinsing with clean water.
- Method 3: Roast a piece of ginger, then pound it, rub the roasted ginger onto the beef, and rinse it clean.
Then use a towel to pat the beef dry, season with a little salt and pepper on both sides, and let it sit for about 10 minutes.
Remember to use a small amount of each seasoning but spread it evenly over the meat. Be sure to wear gloves or wash your hands clean to rub the seasoning evenly onto the beef!

Sear the beef
Peel the garlic. Mince half of it and cut the other half into halves.
Place a pan on the stove, turn the heat to high, add 2 tablespoons of olive oil and heat it up. Once the oil is hot, add the beef to sear, keeping the heat high.
Sear the first side for about 4 – 5 minutes, adding the halved garlic and 3 sprigs of lemongrass. Then flip to the other side and sear for 2 minutes.
Continue to add 25g of unsalted butter and wait for the butter to melt completely. Then use a spoon to scoop the melted butter and pour it over the beef for about 1 minute, then turn off the heat. Remove the beef from the pan to let it cool slightly.

Making the cream sauce and finishing up
Place a pan on the stove and heat it up, then add 15g of unsalted butter, and let it melt.
Next, reduce the heat, add 1 tablespoon of chopped onion, minced garlic, and 2 sprigs of tarragon, and sauté for 2 minutes until fragrant.
Then add 1/2 teaspoon of salt and 20ml of whisky, stir the mixture for another 30 seconds.
Continue adding 100ml of cream and simmer until the sauce thickens, then turn off the heat.
Transfer the beef to a plate, drizzle the cream sauce over it, and it’s ready to enjoy.
