Pork belly 100 gr Pickled melon 3 pieces Shallots 1 bulb Chili 4 pieces Fish sauce 1 tablespoon Chili powder 1/4 teaspoon Cooking oil A little Pepper 1 teaspoon Salt 1/2 teaspoon

How to choose fresh and good pork

  • Choose fresh pork that has bright colors, light pink or light red, with fat that has a slightly translucent white color.
  • Choose meat with good elasticity and a distinctive aroma. If it is belly pork, the meat and fat should stick tightly together, not separating.
  • Avoid buying pork with strange colors, pale colors, unusual spots, or too dark colors; if the meat feels soft and mushy, slimy, or has an unpleasant smell.

How to prepare Pork with salted gourd

  • Prepare ingredients and marinate the meat

    Salted gourd should be washed thoroughly with water, then sliced into thin pieces with a knife. Once sliced, wash it again with water and remove the old seeds. After preparation, place the salted gourd into a container.

    After purchasing, soak the pork in a diluted saltwater solution for 10 – 15 minutes to clean off dirt and reduce the fishy smell. Chop the shallots finely.

    Then cut the meat into thin slices and marinate with a mixture of chopped shallots, 1 tablespoon of fish sauce, 1 teaspoon of pepper, 1/2 teaspoon of salt, mix well and let the meat soak up the spices for 15 minutes.

  • Cooking the Meat

    Place a pot on the stove, add a little cooking oil, and heat it over medium heat. When the oil is hot, add the minced shallots to the pot and sauté until fragrant.

    Then add the marinated meat, stirring constantly to prevent burning, and sauté until the meat is seared and aromatic, then continue to add the salted gourd and stir together. Add 1/2 cup of water and simmer over low heat.

    After about 7 minutes, add 4 chili peppers and 1/4 teaspoon of chili powder to the pot, and adjust the seasoning to your family’s taste. Continue to simmer on low heat until cooked.
