Prepare ingredients and marinate the meat
Salted gourd should be washed thoroughly with water, then sliced into thin pieces with a knife. Once sliced, wash it again with water and remove the old seeds. After preparation, place the salted gourd into a container.
After purchasing, soak the pork in a diluted saltwater solution for 10 – 15 minutes to clean off dirt and reduce the fishy smell. Chop the shallots finely.
Then cut the meat into thin slices and marinate with a mixture of chopped shallots, 1 tablespoon of fish sauce, 1 teaspoon of pepper, 1/2 teaspoon of salt, mix well and let the meat soak up the spices for 15 minutes.
