- Choose lamb meat that is pink-red, with opaque white fat that is dry.

- Choose lemongrass that has a characteristic fragrant smell, thick and even stalks, with fresh leaves that are not wilted.
- Choose lemongrass with a round, thick base and a purple-green color for the best flavor when cooked.
- Avoid buying lemongrass that only has a long, white stalk as it is less fragrant.

- Choose chili peppers that are bright, evenly colored, with a natural fragrant smell.

Prepare the lamb
The lamb should be rinsed once with clean water, then placed in a bowl, and washed with a little white wine for about 5 minutes before rinsing again with water.
After that, use paper or a cloth to dry the water, then cut into thin slices and place in a bowl.
Effective tips to eliminate the smell of lamb:- Method 1: Rinse the lamb with water, then use smashed ginger mixed with white wine to rub on the meat for about 15 minutes to eliminate the smell.

Prepare other ingredients

Marinate the cut lamb with a mixture of ingredients including: 1/2 chopped garlic, sliced chili, 1/2 spoon of monosodium glutamate, 1/2 tablespoon of seasoning, 1/2 tablespoon of soy sauce, 1/2 tablespoon of five-spice powder, 1/2 tablespoon of pepper, 1/2 tablespoon of sugar, 1 tablespoon of oyster sauce, 1 tablespoon of olive oil, and 1/2 chopped lemongrass.
Mix the ingredients well, cover the bowl with plastic wrap, then place it in the refrigerator for marination for about 1 hour for the meat to absorb the flavors.
Tip: To prevent the meat from becoming tough and dry after cooking, do not add salt during the marination process. -
Stir-fry lamb with lemongrass and chili
Place a pan on the stove with 3 tablespoons of cooking oil and heat over medium heat. When the oil is hot, add the remaining chopped garlic and lemongrass and sauté them on high heat for about 1 minute.
