  • You should choose shrimp with a translucent shell, a tail that is curled, and a slightly curved body as this indicates fresh shrimp.
  • In addition, choose shrimp with the head firmly attached to the body, and the shell joints on the body should be flexible.
  • Avoid choosing shrimp that have turned dark brown, are slimy, have heads that fall off the body, and especially those that have an unusual foul smell as they have gone bad.

  • You should choose young bamboo shoots, with thin skin, crispy, uniform segments in size, straight shape, and especially a characteristic fragrant smell.
  • Avoid choosing bamboo shoots that are too white, have a twisted shape, have many tiny black spots, and feel dry to the touch.

How to cook Stir-fried Shrimp with Bamboo Shoots

  • Prepare the shrimp

    After buying the shrimp, use a scissors to cut off the head, peel the shell, then use a knife to cut along the back and slowly pull out the black vein. After that, rinse with clean water and drain.

    Marinate the shrimp with 1 spoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/2 tablespoon of fish sauce, mix well and let it sit for about 15 – 20 minutes for the spices to soak into the shrimp.

  • Prepare other ingredients

    To reduce the bitterness and acridity of bamboo shoots, boil them in water with a little salt for about 30 – 45 minutes, then drain and cut into bite-sized strips, and rinse with clean water a few times and let it drain.

    Put the bamboo shoots into an plate along with seasonings including: 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 1/2 tablespoon of fish sauce, mix well and marinate for about 15 – 20 minutes.

    Wash the green onions and chili peppers, and chop them using a knife. Peel and wash the garlic and shallots, then mince them finely.

  • Sauté shrimp

    Place a pan on the stove, add 2 tablespoons of cooking oil and heat over medium heat. When the oil is hot, add chopped onion and garlic to sauté until fragrant.

    Once the onion and garlic are golden and fragrant, turn the heat to high, add the bamboo shoots, and stir-fry for 2 – 3 minutes until the bamboo shoots are firm, then add all the marinated shrimp, stir-fry for another 4 – 5 minutes, and turn off the heat.

    Serve the sautéed shrimp with bamboo shoots on a plate and it’s ready to enjoy.
