How to choose fresh pork ribs
- Choose fresh pork ribs that are light pink in color and dry. Select pieces of meat that have a thick loin and less fat for better taste and tenderness.
- Press down to see if the meat has good elasticity, is firm, and does not ooze slime. The piece of meat should still cling tightly to the bone, not be crumbly or loose.
- Do not buy meat that is soft and mushy, has slimy ooze, is purple or has an unusual foul smell.
How to choose fresh pig trotters
- It is advisable to choose the hind trotters of the pig as they usually have more meat, are firm, and have higher nutritional value.

Prepare the pork ribs and pig trotter
Soak the pork ribs and pig trotter in diluted saltwater for about 20 minutes, scrape off any remaining hair on the skin of the pig trotter, then wash both thoroughly with water.
Boil a pot of water over high heat and add the pork ribs and pig trotter, blanch for about 3 minutes, then remove and rinse under running water and let drain.

Prepare other ingredients
Peel and wash the garlic and shallots, then blend them into a paste.
Wash the bell peppers, remove the seeds, boil them in water for about 3 minutes, then blend them into a paste.
Pick the leaves of the herbs to accompany, soak in salt water, then wash and drain.

Marinate and fry ribs and pig trotter
Add the blended garlic and shallots to the bowl with the ribs and pig trotter, and mix well.
Add 2 tablespoons of fish sauce, 10ml of cooking oil, 2 teaspoons of chili sauce, 3 tablespoons of sugar, 2 tablespoons of seasoning, mix well and then put in the refrigerator refrigerator for about 2 – 3 hours to let the meat absorb the spices.
Heat a pan over medium heat with 50ml of cooking oil. When the oil is hot, add the marinated ribs and pig trotter and fry until all sides are slightly golden; then remove and drain the oil.

Next, add the remaining marinating liquid into the pan, bring to a boil, then add the pureed boiled bell pepper, stirring until the sauce thickens.

Add 660ml of soda water (2 cans) and 150ml of filtered water into the pot, then put it on the stove, bring to a gentle boil, then add the stir-fried meat and season with 2 tablespoons of fish sauce, 2 tablespoons of sugar, and 1 tablespoon of seasoning powder, stirring well.
Heat another pan with 20ml of cooking oil and 1 tablespoon of annatto seeds, stirring for about 3 – 4 minutes until the seeds turn a nice red color, then add them to the pot of stewing pork.
Place another pan on the stove with 20ml of cooking oil, heat the oil, then add 2 tablespoons of ground chili and 2 tablespoons of ground garlic, stirring until the mixture thickens, and then add it to the broth pot.
Bring the pot of stewing meat to a boil again, adjust the seasoning to taste, and then turn off the heat.

Completion
Put the rice noodles into boiling water for about 30 seconds and then take them out into a bowl.
