- Under the chicken’s wings, visible meat and blood vessels indicate the chicken is firm and not fatty.
- Avoid choosing sick chickens, those with ruffled feathers, raised head feathers, and slightly damp feathers.
- Do not choose chickens that look lethargic, with drooping tails and slow, sluggish movements.

- Choose chickens of moderate size, with skin that has a characteristic golden color.
- The outer skin should be thin, have good elasticity, smooth to touch, and not too bumpy.

- Choose quail eggs with bright, sturdy shells. Avoid eggs with gray shells or those with streaks.
- When shining a light through the egg, if it is fresh, the inside will appear translucent pink, with the yolk in the center.
- Gently shake the egg, fresh quail eggs will be very dense and make no noise.
- Avoid choosing eggs that have been stored for a long time, with cracked shells, and have a foul smell when held up to the nose.
How to Prepare Quang Noodles with Chicken

Prepare Ingredients
Buy a whole chicken that has been cleaned, remove any bad odor by soaking it in diluted salt water for about 10 minutes, then rinse thoroughly with water and cut into bite-sized pieces.
Peel the onion and shallots, wash them, and chop finely.
Wash the banana flower, green onions, lettuce, and mint. Chop the green onions finely and crush the roasted peanuts.
How to Clean Chicken Meat Without Odor:- To keep the chicken from smelling, pluck all the feathers, including the fine hairs, to ensure the chicken is white and clean.
- Mix vinegar with salt in the ratio of 2 salt to 1 vinegar, then massage the chicken all over for about 10 minutes. Afterwards, rinse thoroughly with water several times.

Marinate the chicken and boil the quail eggs
Marinate the chicken with 1/2 of the chopped onion and shallot, 1/2 spoon of turmeric powder, 1/2 spoon of seasoning powder, mix well, and let it sit for 15 minutes for the chicken to absorb the spices.
Put the quail eggs into a pot of water and boil for 7 – 10 minutes, then take them out to cool and peel the shells.

Cook the Quang noodle broth
Heat a pan on the stove with 1 tablespoon of annatto oil. When the oil is hot, add the remaining chopped onion and shallot, and 1/2 tablespoon of turmeric powder, and sauté until fragrant.
Next, add the marinated chicken and stir-fry until the meat is firm. Add 700ml of filtered water and 500ml of fresh coconut water, stir well over high heat.
When the water boils, season with 2 tablespoons of fish sauce, 1 tablespoon of rock sugar, stir well, then reduce to medium heat and cook for about 15 – 20 minutes.
Adjust the seasoning to taste, then add the quail eggs, cook for another 5 minutes, then turn off the heat.

Put a pot of boiling water on the stove and add a suitable amount of noodles to blanch for about 1 – 2 minutes, then take them out into a bowl.
Then add chicken, quail eggs, a little green onion, and roasted peanuts, then pour the broth over it to enjoy.
