How to choose delicious and safe bean sprouts

  • Clean bean sprouts usually have long roots branching out compared to bean sprouts with short, stubby roots that are darkened by chemical soaking. Additionally, delicious bean sprouts will have slightly thin, unevenly long stems, and a milky white color. In contrast, chemically treated bean sprouts will look more appealing, with uniformly long and thick stems and a bright white color.

  • Prepare the ingredients

    Wash the bean sprouts thoroughly, then briefly blanch the bean sprouts in boiling water and remove them to a bowl. Soak the seaweed in water in a small bowl for 10 minutes, then use a strainer to filter the seaweed.

    Gently wash the tofu with water and cut it into small bite-sized cubes.

  • Boil the noodles

    Add 1 liter of water to a pot and bring it to a boil. Once the water is boiling, add the Udon noodles and cook for about 5 minutes until the noodles expand. After removing them, immediately place them in a bowl of ice water and soak for about 5 minutes.

  • Make the broth

    Pour 1 liter of water into a pot, then add 3 spoons of seaweed seasoning powder and bring it to a boil. Once the water is boiling, add the soaked seaweed, tofu, and 1 tablespoon of soy sauce, then cook for an additional 5 – 7 minutes over medium heat.

    You put the boiled Udon noodles into a large bowl, then add the broth, and a little bean sprouts, and you are done.
