How to Prepare Stir-fried Chicken with Cabbage and Cheese
-
Prepare and Marinate the Chicken
Buy deboned chicken thighs, remove the skin, wash thoroughly with cold water, then drain, and cut the chicken into bite-sized pieces.
Add minced ginger, garlic, soy sauce, sesame oil, ground pepper, chili powder, and Korean chili sauce into a large bowl, mix all the ingredients together well, and season the mixture to your taste.
Then, add the chicken to the spice mixture, and mix well to coat the chicken evenly with the seasoning.
-
Prepare Other Ingredients
Wash the cabbage and green onions thoroughly. Cut the cabbage into thick strips about one finger width. Cut the green onions into diagonal pieces about 4 cm long.
Grate the cheese into small shreds.
-
Fry the rice cake
Fresh rice cakes purchased should be cut into pieces about 4 cm long with a knife.
Put a pan on the stove over high heat with 1 tablespoon of cooking oil; when the oil is hot, add the rice cakes to pan-fry until they are fragrant and the skin is crispy.
When the outer skin of the rice cakes turns evenly golden and slightly browned, turn off the heat and transfer the rice cakes to a plate.
Tip: When preparing, to keep the rice cakes soft, chewy, and delicious, you should soak the cakes in cold water for 15 – 20 minutes before cooking; this way, the cakes will be firmer and chewier, not crumbly like when soaked in hot water, although soaking in hot water will save you a lot of time.
-
Stir-fry the chicken
Add the chicken to the pot on high heat with 150ml of filtered water, stir quickly to sear the chicken.
Continuously stir the chicken to prevent the spices from sticking to the bottom of the pot and burning.
-
Add the ingredients
When the chicken is stir-fried and the broth starts to boil vigorously, add the cabbage and scallions to the pot, using a ladle to gently push the ingredients down into the broth. When it boils again, reduce the heat, stir well, and cover the pot to simmer for 3 minutes until the chicken is tender.
After 3 minutes, open the lid, taste and adjust seasoning as needed, then sprinkle grated cheese and rice cakes on top, cover again for another 5 minutes for the cheese to melt.

How to choose good chicken meat
- Good chicken should have fresh-looking meat, without a foul odor, and the skin should not have any bruises or blood clots.
- Do not choose dark, dull chickens as these are chickens that died before processing.
- Press your hand on the chicken thigh to check; if the meat is firm, it is good chicken.
- If pressing reveals mushy, slippery, misshapen flesh or indentations indicating water retention, it shows the chicken has been injected with water, sometimes mixed with borax; absolutely do not buy.
How to prepare chicken to reduce odor
- After cleaning the feathers, you need to remove the oil gland at the chicken’s tail as this gland is also a cause of odor.
- Then, rub salt around the chicken’s body and use half a lemon to rub evenly around the chicken.
- Wash the chicken with cold water and let it drain.

How to choose fresh cabbage
- You should choose cabbages that are uniformly round in shape, with a slightly dark green color, and feel a bit heavy and firm in your hand; these are good cabbages.
- Do not buy cabbages that are flat or oval as these are spongy, not firm.
- Do not buy light-colored cabbages as they may be old, tough, fibrous, and not tasty.
- Avoid buying cabbages with damaged outer leaves or those that have turned yellow.
