How to choose fresh and delicious beef
- When buying beef, you should choose pieces that are dark red, with white streaks interspersed, and the fat should be bright yellow.
- Touching it with your hand should feel firm, with good elasticity, not soft, sticky, or have an unpleasant fishy smell.
- Do not choose beef that has turned pale green or dark red, has dark yellow fat, large, hard fibers as these are signs that the beef is not good.

Mix the rice paper batter
Soak 400g of rice flour with 1.6 liters of water in a basin until the surface of the water bubbles up, then gently tilt the basin to let the soaked rice flour water drain out.
Next, transfer the remaining soaked rice flour mixture in the basin to a pot after discarding the water. Then add about 1 liter of water to compensate for the amount of water that was removed.
Stir well, then add 200g of tapioca flour, 200g of potato starch, and 1 teaspoon of salt, mixing until all the flours are dissolved in the water, then let it rest for about 30 minutes.




Making wet cake
First, place the stainless steel pot rack in the center of the electric skillet, add about 200ml of water to the skillet so that the water level does not rise too high above the pot rack.
Next, place a rectangular mold on the rack, turn on the stove, and boil over medium heat until the water in the skillet boils and the mold inside is hot.
Add about 50ml of cooking oil to another small plate and use a brush to evenly spread the oil, then use a ladle to stir the batter, scooping about 2 ladles of batter into the mold.
Spread evenly, cover with a lid, and steam for about 3 minutes until the wet cake inside is soft, then take the mold out and place it on a cloth that has been soaked in water, then slowly take the wet cake out and stack the cakes on a clean surface.
Repeat similarly until the batter is finished.
- To easily remove the wet cake from the mold, you can add a little cooking oil on the edges of the cake.
- To prevent the wet cake pieces from sticking together when stacked, you should add a little cooking oil between the cake pieces.




Grilling the meat
Line a layer of lemongrass, then fill the marinated meat into 2 grilling racks. Next, place it in the oven and grill for 5 minutes at a temperature of 400 degrees Celsius.
Take the grilling rack out, flip the meat, put it back in the oven, and continue grilling for another 5 minutes at a temperature of 400 degrees Celsius until the meat is evenly cooked. Remove the meat and place it in a bowl, sprinkle some finely chopped green onion and 1 tablespoon of toasted sesame seeds on top, and you can start wrapping!




Making the dipping sauce
Place a pan on the electric stove, add 30ml of cooking oil to the pan, and heat over medium heat until the oil is hot, then add 1/3 of the remaining minced garlic and lemongrass.
Sauté evenly until the garlic and lemongrass are golden and fragrant, then add the mixture of: 1 tablespoon of peanut butter, 1 tablespoon of shrimp paste, 1 tablespoon of sugar, 2 tablespoons of fish sauce, and 1/2 cup of filtered water (rice cup).
Cook on low heat for about 2 minutes until the dipping sauce starts to boil, then add 1 teaspoon of chili powder and 2 teaspoons of dried chili.
Mix well until the chili powder and dried chili are combined, then add 1/4 cup of lemon juice (rice cup), stir well, and turn off the electric stove.




Rolling the rice rolls
First, use a knife to cut the cooled rice cakes into small rectangular pieces of equal size, about 3 finger widths wide.
Next, place the cut rice cake lengthwise, then take the grilled beef and fresh vegetables, place them at the end of the rice cake, and slowly roll the rice cake up.
