    First, place a pot on the stove and add 100g of beetroot to boil with 300ml of filtered water. After the water simmers for about 5 minutes, turn off the heat.

    Next, prepare a measuring cup, use a sieve to filter out the solids to obtain about 200ml of beetroot juice and let it cool.

  • Mixing flour, dicing

    To make red diced jelly, you put 200g of tapioca flour into a bowl and gradually pour in 200ml of beetroot water while mixing well. Then, knead by hand for about 10 minutes until the flour forms a sticky, smooth mass.

    Similarly, to make white diced jelly, you gradually add 400ml of filtered water into 400g of tapioca flour and knead until you achieve a cohesive, smooth mass.

    • Remember to use hot water to knead the tapioca flour; using cold water or water that is not hot enough will prevent the flour from binding.
    • Depending on the type of tapioca flour, the water absorption capacity may vary, so you should add water gradually until you form a smooth, cohesive dough.

    Next, gently slice the dough into thin pieces, and then dry the dough slices with paper towels or a clean cloth. When the dough is less wet, cut it into small, even tapioca jelly cubes.

  • Boil the sago pearls

    First, place the sago pearls that have been cut into a sieve and sift to remove any excess flour. Next, put a pot of water on the stove and bring it to a boil, then gradually add the sago pearls.

    Use chopsticks to stir evenly until the sago pearls rise to the surface, preventing them from sticking together. Boil for about 3 minutes, then scoop the sago pearls out and place them in a bowl of cold water. Finally, use a ladle to remove the sago pearls and let them drain.

  • Soak and cook mung beans

    After purchasing, rinse the mung beans 3 times with water and remove any bad or broken beans during the rinsing process. Next, soak the beans in warm water for about 30 minutes, then use a sieve to remove them and let them drain.

    Place a pot on the stove, add the mung beans along with 200ml of water, 1/4 teaspoon of salt, and cook on high heat for about 15 minutes.

    When the water boils, use a spoon to skim off the foam from the surface, then reduce the heat to low, cover the pot, and simmer until the water in the pot evaporates. At this point, check to see if the beans are soft enough.

    Tip: Once covered, you must cook on low heat to avoid the beans overflowing.

    Next, add 20g of sugar to the pot, then use a spoon to mix well while mashing the mung beans until smooth.

    Add 400ml of coconut milk, 400ml of water, 1/4 teaspoon of salt, 150g of sugar, and a little pandan leaf into the pot, then use a spoon to stir well.

    After that, cook the mixture over medium heat until it lightly boils. At this point, the sugar has completely dissolved, turn off the heat and let it cool completely.

  • Mix the tapioca flour, cut into cubes

    Put 150g of tapioca flour into a bowl and then pour in an additional 150ml of cold water. Use a mixing stick to stir until the mixture becomes thick and sticky.

    Tip:

    • If you are using old tapioca flour that absorbs a lot of water, increase the amount of water to about 200ml or more!
    • Instead of using a mixing stick, you can use a fork to make stirring the flour easier.

    Next, use a square cutting board and place 3 layers of paper towels on top. Use 4 chopsticks to create a rectangular mold and then slowly pour and evenly spread the tapioca flour mixture into the mold you just created.

    Tip: Creating a mold will prevent the tapioca flour from spilling out and help you create more uniform and beautiful cubes.

    Let it sit for about 15 minutes for the flour to dry and absorb all the water. At this point, prepare a bowl containing 4 tablespoons of beet juice, then use a brush to dip into it and evenly coat the surface of the flour.

    After about 5 minutes, proceed to brush a second time to create a more vibrant color, then let the surface of the flour dry. When the flour is a bit drier, cut it into small uniform cubes and place them in a bowl.

    Tip:

    • To save time, you can also pour the beet juice directly onto the surface of the flour. However, this will result in a less beautiful and even color.
    • You should leave the flour slightly damp instead of completely dry to make cutting easier.

    Place a pot with about 300ml of water on the stove and bring it to a boil. Next, slowly add the small cubes one by one and use chopsticks to stir evenly so that the cubes do not stick together. Boil for about 3 minutes until the cubes float to the surface, then remove them and place them in a bowl of cold water to soak for about 5 minutes.

    Add 300ml of warm water and 100g of sugar into a new bowl and stir well until the sugar dissolves. Finally, take the cubes from the cold water and soak them in the sugar water to enhance their sweetness.

    Put the cubes together with grass jelly, green beans, roasted peanuts, and coconut milk into a glass, and the green bean pudding with small cubes is ready to enjoy.
