How to Cook Chicken Lotus Seed Soup

  • Prepare and Marinate the Chicken

    Wash the chicken thoroughly, then cut it into small cubes.

    To make the chicken clean and reduce the fishy smell, you can soak the chicken in diluted salt water for 7 – 10 minutes. Use your hands to rub the meat and then rinse it with clean water.

    Put the prepared chicken into a bowl, add 1 sliced red onion, 1 teaspoon of seasoning powder, and 1 teaspoon of fish sauce.

    Mix well to combine the ingredients, then marinate for 15 minutes.

    Tip: You can use chicken thighs, chicken breasts, or chicken wings.

    Soak 30g of shiitake mushrooms in water until soft, cut off the stems, and rinse clean.

    Wash 50g of lotus seeds thoroughly, then remove the lotus seed hearts.

    Peel and slice the shallots. Cut the ginger into thin slices. Rinse the cilantro and green onions, then chop them finely.

How to Prepare Chicken Stew with Lotus Seeds

  • Prepare and Marinate Chicken

    Clean the chicken and cut it into several large pieces.

    Next, season with 1 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, 1/3 teaspoon of pepper, and 1 tablespoon of minced garlic and onion. Use your hands to rub the seasoning evenly onto the chicken pieces and marinate for 15 minutes.

    Place a pot on the stove, add 2 liters of coconut water, the chicken, water chestnuts, lotus seeds, roasted shallots, 1 teaspoon of salt, 1 teaspoon of sugar, and 1 teaspoon of monosodium glutamate. Stir well and stew the chicken for 20 minutes.

    After 20 minutes, add the red apples and shiitake mushrooms, and stew until all the ingredients are tender.

    When the red apples are soft, add the chopped green onions and cilantro to finish.
