How to choose delicious tràm mushrooms
- Tràm mushrooms are a type of mushroom abundant in Phú Quốc, Thừa Thiên Huế, and Quảng Bình. Tràm mushrooms are usually plump, round, with a brown color and a hint of light purple. They have a bitter taste but leave a sweet aftertaste, making them very popular. They appear often after the first rains in March and April.
- Delicious tràm mushrooms will have a thin layer of fibers on the tip, the mushroom stem is full, firm, and dry.
- Do not choose mushrooms that are wet, feel mushy when touched, or have dark spots.
How to choose fresh minced meat
- Fresh, delicious minced pork will have a pink or bright red color, with a bright meat color, not dark or bruised.
- The smell of fresh minced pork will have the characteristic aroma of meat, without any fishy or foul odor.
- If you don’t like ready-made minced pork, you can buy a piece of meat and ask the seller to grind it for you or grind it at home for better assurance.
How to choose fresh shrimp
- It is advisable to choose shrimp with a shiny, clear outer shell, with the meat and shell tightly attached, not loose. If the shrimp still bounces or jumps, it is fresh and alive.

How to make Shrimp and Pork Tram Mushroom Porridge

Prepare the tram mushrooms
First, use a knife to cut off the root and any damaged parts of the mushrooms. Place the tram mushrooms into an bowl, soak for about 10 minutes in salty water to clean off dirt and sand, then rinse well.
To reduce the bitterness of the mushrooms, bring a pot of water to a boil, then add the tram mushrooms and boil for about 5 minutes, then remove and rinse several times with clean water and let drain.

Cook the porridge
Wash the rice thoroughly, then soak it for about 15 minutes to let it expand, then drain. Place a pot on the stove, add about 2.5 liters of water along with the rice, and start cooking the porridge on high heat until the water boils, then reduce to medium heat to continue cooking.
Tip: Stir frequently to prevent the porridge from burning. -
Prepare the shrimp
Wash the shrimp thoroughly, peel off the shell, head, and tail. Use a knife to make a cut along the back of the shrimp to remove the black vein.
Quick and easy way to remove shrimp vein: Use a toothpick to pierce the shrimp at the groove about 2 from the tail, counting up horizontally. Gently pull the toothpick up, and the shrimp vein will come out easily. You should do this before peeling the shrimp for easier handling. -
Mixing shrimp and meat filling
Chop 4 shallots and garlic finely. Gradually add 400g of prepared shrimp meat into a mortar to pound until smooth, then add minced meat and continue to pound together with the shrimp. Pound until the minced meat and shrimp are sticky and well combined.
Gradually add shallots and garlic, reserving a little for later frying to enhance the porridge’s aroma. Next, season with 1 teaspoon of seasoning powder, 1 teaspoon of pepper, 0.5 teaspoon of monosodium glutamate, and 0.5 teaspoon of salt into the shrimp and meat filling mixture, then continue to mix thoroughly. Transfer the shrimp and meat filling mixture to a plate and shape it into small bite-sized balls.
Tip: Reserve a little minced meat to stir-fry and add to the porridge later, as this will help enhance the sweetness of the porridge. -
Prepare the remaining ingredients
The remaining shallots are sliced thinly to make fried shallots. Place a pan on the stove, add oil to the pan, and wait until the oil is hot before adding the sliced shallots to fry until fragrant.
After about 3 – 4 minutes, stir the shallots once until they turn golden, then turn off the heat. Strain the oil out of the shallots, and you have completed the fragrant fried shallots.
Chopped Vietnamese coriander, cilantro, and green onions are added to season the porridge at the end.
Tip: When the fried shallots are golden and crispy, turn off the heat and add a little raw cooking oil to the pan. This will help the oil cool down and prevent the fried shallots from burning. -
Stir-fry mushrooms and minced meat
The minced meat that you set aside earlier should be stir-fried with a bit of minced shallots until the meat is firm, then remove it from the heat and let it cool.
Take another pan, add some filtered shallot oil that you just prepared. When the oil is hot, add the tràm mushrooms, season with 0.5 teaspoons of seasoning powder and a bit of pepper, then stir-fry for about 3 minutes until the mushrooms absorb the seasonings, then turn off the heat.

Complete the porridge
Add the stir-fried minced meat to the porridge to enhance its sweetness. Cook until the porridge begins to boil, then add the shrimp and meat balls to cook.
Cook for an additional 10 minutes until the porridge is soft, then add the stir-fried tràm mushrooms and continue cooking for another 5 minutes before turning off the heat.
Gradually add fried shallots, Vietnamese coriander, chopped green onions, and cilantro into the porridge. Scoop the porridge into a bowl and sprinkle a bit of pepper on top.
