Cornstarch 15 g Minced ginger 7.5 gr Minced garlic 5 g Mirin 45 ml Soy sauce 120 ml Honey 15 ml Brown sugar 110 gr Sesame oil 15 ml

What is Mirin?

  • Mirin is a sweet seasoning with a light yellow color, a slightly thicker liquid than water. It contains about 40% – 50% sugar and 14% alcohol. Mirin is used to season braised and grilled dishes to give the finished food a shiny appearance.
  • You can buy Mirin at supermarkets, baking stores, or e-commerce websites.
  • The price of Mirin ranges from 100,000 to 190,000 VND depending on the type.

How to make Japanese Teriyaki Sauce

  • Mix the ingredients

    Add the Teriyaki sauce mixture including: 20ml soy sauce, 110g brown sugar into a bowl and stir until dissolved.

    Then add 7.5g minced ginger, 5g minced garlic, 15ml honey, 15ml sesame oil, and 45ml Mirin wine into the bowl and mix well.

  • Cook the Teriyaki sauce

    Pour the Teriyaki sauce mixture into a pot and bring to a boil. When the Teriyaki sauce starts boiling, reduce the heat and simmer for about 4 minutes until the sauce thickens.

    Remove the pot from the stove and let the Teriyaki sauce cool to finish.

    Note: When the Teriyaki sauce is completely cool, pour it into tightly sealed jars and store it in the refrigerator to preserve it for a long time

How to choose delicious fish fillets

    Wash the broccoli, carrots, and bell peppers thoroughly, peel the carrots, and cut them into small pieces.

    To prevent the fish fillet from being fishy, soak the fish in rice water or dilute salted water for about 10 minutes, then wash it clean. Alternatively, you can rub coarse salt directly on the fish, or soak the fish in cold water mixed with a little vinegar.

  • Blanching vegetables

    You boil water and wait until it boils, then add the vegetables and blanch for about 2 minutes before removing them.

    Add 70g of teriyaki sauce into a bowl with 70g of soy sauce, 15g of sugar, 15g of white sesame and mix well.

    Wrap a layer of parchment paper on the baking tray, then arrange the vegetables underneath and brush with 1 layer of cooking oil along with 5g of salt, 5g of pepper. Once done, place the fish fillet on top and drizzle teriyaki sauce over the fish and the vegetables.

    Put the fish in the oven at a temperature of 220 degrees Celsius for about 20 minutes.
