- Choose bok choy with a white-green stem, light green, which may or may not have roots.
- Fresh bok choy usually feels heavy, not wilted, rotten, or with leaves turning black-yellow.
- To buy fresh bok choy, you should select those with bright green color, smooth, shiny leaves, without dark spots, and leaves that are not wilted, withered, or turning yellow.
How to choose fresh and delicious pork bones
- You should buy pork bone pieces that have a good mix of bone, meat, and fat so that the soup is sweet, rich, and appealing.
- Choose pork bones that have a bright light pink color; when you gently press the meat and fat, they should still feel firm and not mushy.
- Do not buy pork bones that look dark purple or have an unusual fishy smell; these are bones that have been stored for too long and are no longer fresh.

Prepare the ingredients
To eliminate the fishy smell of the pork bones, after purchasing, rinse them and then soak the bones in diluted salt water for 15 minutes. After that, take the bones out, rinse them with clean water, and let them drain.
How to clean pork bones without odor:
- Method 1: After cutting the pork bones, use vinegar along with a little crushed ginger to rub over the bone pieces for about 5 minutes, then rinse with water.
- Method 2: Soak the pork bones in rice washing water for about 15 – 20 minutes, then rinse with water; this will help eliminate the odor from the bones.
Marinate the bones with minced shallots, 1 teaspoon of salt, 1/2 teaspoon of MSG, 1 teaspoon of seasoning powder, and 1 teaspoon of pepper. Let it sit for about 30 minutes for the bones to absorb the spices.
Separate the bok choy leaves, wash them thoroughly, let them drain, and then cut them into bite-sized pieces.

Cooking the Soup
Place a pot on the stove, add 1/2 tablespoon of cooking oil into the pot. When the oil is hot, add all the marinated bones, and stir-fry briefly for about 2 minutes until the bones are browned.
Add 1.5 liters of water to the pot, cover it and bring to a boil. Once boiling, skim off the foam and reduce the heat to low, simmering the bones for about 20 minutes.
After 20 minutes, add the bok choy along with 1/2 tablespoon of seasoning and 1 teaspoon of salt to the pot.
Wait for the water to boil again, then taste and adjust seasoning as needed before turning off the heat.
Scoop the soup into a bowl, sprinkle some ground pepper for aroma, and it’s ready to enjoy.
