How to choose fresh ingredients
How to choose fresh beef
- You should choose pieces of beef that are bright red, press the meat with your hand to check for good elasticity, and ensure there is no sliminess or unpleasant odor.
- Additionally, you should choose tender and small pieces of meat that do not look too smooth, with fat that is light yellow.
- Avoid buying meat that is pale green or mushy, has an unusual smell, or shows white spots on the meat fibers as this indicates the meat has been stored for too long, which will not taste good and may adversely affect health.
How to choose fresh and clean lemongrass leaves (or basil leaves)
- You should choose fresh lemongrass or basil leaves that are bright green, and the leaves should not be torn or heavily infested with pests.
- Avoid buying wilted leaves or overly lush green ones as they may have been sprayed with chemicals, which can negatively affect health when consumed.
- Additionally, to ensure safety, you can also buy basil leaves instead of lemongrass leaves from supermarkets like Bách hoá XANH or you can grow them at home!

Prepare the ingredients
To eliminate the unpleasant smell of beef, soak the beef in a diluted saltwater mixture for about 10 minutes, then remove it, rinse with water 2 – 3 times, drain, and cut into bite-sized pieces.
Effective tips to remove the odor of beef- Method 1: Roast a piece of ginger until cooked, pound it finely, and then rub it onto the beef for about 5 minutes before rinsing with clean water.
- Method 2: Instead of marinating the meat with garlic, lightly roast a shallot, then pound it finely and marinate it with the beef.
- Method 3: You can rub vinegar onto the beef or soak the beef in diluted vinegar for about 5 minutes, then rinse with clean water.

Remove the leaves from the basil, discard the stems and any damaged leaves, soak in diluted salt water for about 5 minutes, then take them out, rinse with clean water, and let them drain (you can chop the leaves if you want).
Peel the garlic, rinse briefly with water, and then use a mortar and pestle to crush it finely.
-
Marinate the beef
Marinate the sliced beef with a mixture of seasonings including: 1/2 of the crushed garlic, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of monosodium glutamate, 1 teaspoon of ground pepper, 1 tablespoon of oyster sauce, and 1 tablespoon of chili sauce.
Stir well to let the beef absorb the seasoning and then place it in the refrigerator for about 20 minutes.
-
Stir-fry beef with Thai basil
Place a pan on the stove and turn on medium heat, add 2 tablespoons of cooking oil to the pan, wait for the oil to heat up, then add garlic and sauté until golden and fragrant, then add the beef and stir-fry for about 5 minutes on high heat until the meat is firm.
Add the Thai basil leaves to the pan and stir-fry over medium heat for about 5 – 7 minutes, then add 1 tablespoon of fish sauce, adjust the seasoning to taste, then turn off the heat, transfer the meat to a plate and sprinkle with a bit of ground pepper to finish.
