How to choose good ingredients
How to choose crunchy, delicious jellyfish
- For fresh jellyfish, you should choose those that have good elasticity; when touched, they should not feel slimy.
- You should not choose jellyfish that show signs of spoilage, such as a cloudy body, being too soft when touched, and having a strange foul smell.
- If you want to buy dried jellyfish, you should choose jellyfish packed in vacuum-sealed bags, which should still have a certain degree of softness and not be too dry and hard.
- You can choose either fresh or dried jellyfish to make this dish.
How to choose crunchy, delicious green mangoes
- You should choose mangoes that have a round waist, tapering towards the tail.
- Prioritize buying those with stems that are still slightly wet, fresh, and sticky with sap.
- At the same time, you can check by pressing; if it feels hard, you should buy it, but if it feels soft, you should not buy it as it may be ripe or have been stored for too long and is no longer tasty.
How to choose fresh, delicious cabbage
- You should choose cabbage that is evenly round; do not buy those that are flat or oval as they are often spongy and not firm.
- You can also check by picking it up; if the cabbage feels heavy and firm, those are good cabbages, and you should buy them.
- Do not buy cabbage that is bruised, crushed, or has an unusual foul smell.
How to choose crispy, delicious cucumbers without bitterness
- You should choose those with a slender, balanced shape that feel firm in hand.
- Fresh cucumbers usually have a dark green color, a shiny skin, and are not scratched or bruised.
- Preferably, choose cucumbers that still have their stem intact, are fresh green, and still have the flower bud attached.

Prepare the ingredients
Soak the dried jellyfish in water to reduce the saltiness, then drain in a colander. Once drained, place the jellyfish in a bowl, add 1/2 tablespoon of fish sauce and 1/2 tablespoon of sugar.
Sliced cabbage should be washed and drained. Peel the onion, wash it, and then slice it thinly, then soak all the onion slices in ice water for about 10 minutes.
Peel the mango and cucumber, wash them, and then shred them. Squeeze the juice from the calamondin into a bowl.
Peel the garlic, wash it, and then finely chop it. Remove the stems from the chili, wash it, and then finely chop it. (You can put these two ingredients in a blender to save cooking time).
How to clean jellyfish without a fishy smell, clean, and safe:
- For jellyfish from seafood markets, which have already been processed once: you need to clean them more thoroughly by mixing salt and alum into water and soaking the jellyfish until the flesh changes to a light red or light yellow color before using.
- For processed jellyfish: Use lemon, vinegar, and salt to soak and wash the jellyfish several times to reduce the amount of chemicals used during processing and preserving the jellyfish.

Make the dipping sauce
To make the dipping sauce, put 1 tablespoon of fish sauce, 2 teaspoons of sugar, lime juice, 1 tablespoon of water, and 1/2 teaspoon of monosodium glutamate into a bowl. Then, stir well to dissolve the seasonings.
Once the seasonings are dissolved, add all the minced garlic and chili.
-
Mix the salad
Using a large bowl, add all the vegetables, place the jellyfish on top, and drizzle the sweet and sour fish sauce over it, mixing well so that the vegetables and jellyfish absorb the flavors.
Then, serve the salad on a plate; you can sprinkle a little toasted sesame or roasted peanuts on top to make the dish more fragrant and visually appealing.
