How to choose sweet jackfruit
- For dried jackfruit, you should choose ripe, yellowish jackfruit; do not choose overly soft jackfruit as it will affect the quality of the dish.
- To select good jackfruit, you can taste a bit. Good ripe jackfruit will have a sweet and creamy taste, not fibrous or strange.
- Good ripe jackfruit is usually heavy in hand. Tree-ripened jackfruit has a strong and characteristic aroma. Jackfruit that has been injected with chemicals usually does not smell as fragrant as tree-ripened jackfruit.
- Good tree-ripened jackfruit typically has a brownish-yellow skin, the spikes are no longer sharp, and the distance between the spikes is usually far apart. If the jackfruit has green skin, sharp spikes, and close spacing of spikes, it is still young and has been artificially ripened.

How to make Jackfruit Candy

Prepare and blend the jackfruit
Buy ripe jackfruit, peel it, remove the seeds, and then cut it into small pieces with a knife. Put the jackfruit into a blender and blend until smooth.
Tip: If you don’t have ripe jackfruit, you can buy fresh jackfruit, peel it, remove the seeds, cut it small, and put it in a plastic container to refrigerate for 2 – 3 days to ripen.

Marinate the jackfruit
Add 500g of sugar to the blended jackfruit and mix well.

Cook the jackfruit
First, squeeze the juice from 3 lemons.
Place a pan on the stove, add the jackfruit mixture and bring to a boil, then add the lemon juice and stir well over medium heat for 45 minutes until it turns brownish-yellow.
Then, reduce the heat and continue stirring for another 25 minutes until the mixture thickens.

Roasting candy
Spread the jackfruit mixture evenly on the baking tray, turn on the top heat for the oven and roast for 15 minutes at 120 degrees Celsius.
After 15 minutes, take the tray out, mix it well, then spread it evenly on the tray again, and put it back in the oven for another 1 hour and 30 minutes at 120 degrees Celsius.
Tip: If you don’t have an oven, you can use a stove to stir-fry over medium heat for 45 minutes, then stir-fry over low heat and stir continuously until the mixture becomes very thick.

Add 1 tablespoon of toasted sesame and 100g of toasted and shelled peanuts to the jackfruit candy and mix well.
Line a new tray with a piece of plastic wrap, then spread some cooking oil around the surface, and evenly spread the jackfruit candy on it, then let it cool for 5 hours.
Finally, use a knife to cut the jackfruit candy into pieces as you like to finish.

- Using a lemon to rub on the sap area will also effectively remove it.
