How to choose good quality brown rice
- When buying brown rice, you should choose grains that have a slightly rough and shiny outer layer due to the bran covering it.
- You should choose the blood dragon brown rice as it is the best; when split in half, you will see the inside of the grain has a red color, and it tastes sweeter than regular brown rice.
- Additionally, you should choose sticky rice that emits the characteristic aroma of freshly harvested rice, without any signs of weevils, and when held, it feels smooth, which indicates good quality rice.
- Grains of brown rice that show signs of weevils are old grains that have been stored for a long time, thus having significantly lower nutritional value compared to freshly harvested brown rice.
How to choose, where to buy quality malt syrup
- There are 4 types of malt syrup you can buy on the market: traditional malt syrup, industrial malt syrup made from cassava (tapioca), malt syrup cooked from liquid taken from sugar factories, and malt syrup combined from tapioca and glutinous rice flour.

How to make Brown Rice Candy with Sesame

Rinse brown rice
The brown rice you bought should be rinsed clean twice with water and then drained using a basket.

Roast brown rice
Place a pan on the gas stove, add all the brown rice into the pan, then stir evenly for the first 4 minutes on high heat, then reduce to low heat and roast for another 5 minutes until the brown rice is dry, then turn off the heat.
Pour the roasted brown rice into a bowl to cool.

Cook malt syrup
Place the pan that has roasted brown rice back on the stove, then add 100ml of filtered water, turn on medium heat, and boil for about 2 minutes until the water in the pan boils.
Add 80g of malt sugar, 150g of sugar, 1/2 teaspoon of baking soda, and 1 teaspoon of corn syrup into it.
Reduce the heat, stir continuously while cooking for about 8 – 10 minutes until all ingredients dissolve and the malt mixture boils, turns brown, and reaches the required standard.
Tip: To determine if the malt syrup is cooked to the standard, you just need to test the sugar by dropping a drop into a bowl of cold water, then squeeze and pick it up with your hand. If the sugar hardens, it is done. -
Making brown rice sesame candy
After the malt syrup has been cooked to perfection, add in the roasted brown rice, stirring constantly so that the malt syrup coats each grain of brown rice, then turn off the heat.
Next, add to the pan, 100g peanuts and 100g of roasted sesame, mix for about 2 minutes until the peanuts and sesame are evenly combined with the brown rice malt syrup.

Cut the candy
After the ingredients are mixed together, pour the candy mixture into a mold, using a plastic sheet to press the surface of the candy down firmly.
When the candy cools and hardens a bit, cut it into bite-sized pieces, let it cool completely, and then you can enjoy!
